    queen cakes

    4oz soft marg
    4oz sugar
    4oz sr flour
    2 eggs
    1 level tsp baking powder 200oc

    mix all, beat 2 mins, divide between paper cases, bake about 15 mins

    you can add currants or sultanas

    ice with a water icing, 2-3oz icing sugar and a little water

    you could always try my hobnobs :D but you need porridge oats

    Variations for fairy cakes - all depends on whether for kids or adults :D:

    take a little slice off the top and put some butter icing/lemon curd/jam on then replace the top and dust with icing sugar (or cut the top bit in half and turn into butterflies)

    ordinary water icing

    lemon icing made with juice of half a lemon instead of water

    some glace cherries (washed,dried and chopped) added to mixture

    water icing with half a cherry on top (or jelly tots/smarties/100's&1000's)

    choc chips

    finely chopped walnuts in the mix with coffee flavoured icing

    Thanks for your replies i have made a shopping list and will get OH to pick up what we need

    I have also found a recipie for Muffins i think i will make bananna and chocolate muffins

    50g of butter
    150g of self raising flour
    50g of caster sugar
    half teaspoon of baking powder
    1 egg
    110 milk
    120g of bananna/chocolate

    This is the recipe that I use and it always works out

    Makes 24 mini cakes or 12 larger ones. For mini cakes you will need a 12 hole tartlet tin (these are 5cm at the rim and 1 1/2 cm deep) and you will need to use it twice. For larger cakes use a 12-hole bun tin (these are 6 1/2 cm at the rim and 2cm deep). You can use the little paper cases according to the size tin you have. If not, butter the base and sides of the holes before filling with the mixture
    125g / 4 1/2 oz softened butter
    125g / 4 1/2 oz caster sugar
    2 eggs, lightly beaten
    1 tsp vanilla extract
    125g / 4 1/2 oz self-raising flour
    2 tbsp milk

    1.Preheat the oven to 190C/375F/Gas mark 5. Either butter the tin or place the paper cases in the holes (see above). In a mixing bowl beat the butter and sugar until pale and fluffy. You can use an electric whisk or a wooden spoon.
    2. Add the beaten egg, a little at a time, whisking to incorporate, then beat in the vanilla.
    3. Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined.
    4. Spoon into the tin and bake for 12 minutes or until risen and golden on top. Allow to cool for ten minutes on a rack before removing from the tin.
    So little money - so much time :mad:
  • I always weigh two eggs and then put in that exact amount of flour, sugar and margarine, with 1 tsp of baking powder, a few drops vanilla extract and 2 tbs soured cream. For chocolate cake I replace 40g of flour with cocoa powder, for coffee I add a little bit of cold strong black coffee, and a handful of chopped walnuts.

    My favourite are the coffee ones, with coffee water icing on and a walnut on the top.

    My DD (4 1/2) and I have just put the fairy cakes and bananna muffins in the oven

    I t didnt take very long to make

    The only prob is i had small cases but had to put them on a normal flat tray as i dont have a proper fairy cake baking tray. The muffins are in the yorkshire pud tray

    Im going to look at making bread recipies now (whilst im in the mood) i have some stong white flour and yeast granules

    Oh dear i just looked at the fairy cakes as i took the muffins out :o
    erm putting them just in the cases wasnt the smartest :rolleyes: they have merged together to make a fairy cake mass!!!!:rotfl:

    Thanks twink the cakes taste great the kids love them and im in their good books now;)

    I made bread from one of the posts it was really quick and easy and it tastes good too

    as you can tell i dont usually bake but i really enjoyed today and so did DD DS2 and DS1
