Fairy Cakes....

How do I make fairy cakes?

Kids are off on half term this week and I want to make some cakes with them but don't want to spend out on the boxes of fairy cake mixes which cost over a pound for 12 tiny rubbish ones!

Does anyone have a receipe for easy to make (can't cook!) fairy cakes where we can make a heap for a small price?

I'll buy paper cases, icing sugar, colouring and jelly tots etc to decorate them, just need to know how to make the cakes themselves. (And a list of ingredients of course lol)

    Standard victoria sponge cake mix really. 6oz of self raising flour, sugar, butter / marg, 3 eggs and some baking powder. sugar & butter first .... and when its all fluffy add and mix the rest.

    Its basically equal amounts of all the ingredients.

    I weigh my eggs. ie: 2 eggs = 5oz. So I use 5oz butter, 5oz sugar and 5oz SR flour.
    Beat sugar and butter until light and creamy, beat in eggs, then stir in flour.

    A very basic victoria sponge mix is perfect for fairy cakes :D

    4oz butter
    4oz sugar
    2 eggs, beaten
    4oz SR flour

    Quantities can be varied by using the scale above i.e. 6oz of everything plus 3 eggs and so on ;)

    Cream butter and sugar together, add beaten egg and fold in the flour. Bake in moderate oven gas 5 for about 15-20 mins :)

  • ahh I love making cakes so I could give you the recipie I use. I just hope they work ok :)

    Ingredients
    100g s/r flour
    100g caster sugar
    2 eggs
    100g butter

    Method
    1. cream butter and sugar together until soft and creamy, like a mixture instead of a ball
    2. beat in eggs 1 at a time with a tablespoon of flour in between
    3. fold in the rest of the flour with a spoon
    4. spoon into paper cases in a 3 x 4 fairy cake tin
    5. bake at 190C/375F for 20-25 mins (change for different ovens: fan ovens take off 10%

    1 thing don't open the oven till they are done otherwise they won't rise well enough, I do it all the time, i dont have enough patience icon11.gif

  • I make fairy cakes with:
    4oz marge, 4oz castor sugar, 4oz SR flour, 2 eggs, few drops of vanilla essence.

    Cream the marge and sugar until pale in colour; add the beaten eggs - a bit at a time then add the SR Flour and the essence. Spoon the mixture into cake cases and bake at 170 for about 15 minutes (until golden brown). When cooked and cooled down mix a few drops of water with some icing sugar and cover the cakes. I add either sweets (Smarties, milk chocolate buttons, or 100's & 1000's etc).

    Butterfly cakes when the fairy cakes are baked and cool cut off the tops fill the hollow with buttercream cut the tops in half and put them on the buttercream like wings then dust with icing sugar

    Thanks Guys, that's great! (And seems so simple luckily for me lol!) :)

    I'll trot off to Tesco later to get the ingredients and then tomorrow morning I will bake some cakes with the kids!

    I often make icing (icing sugar, and just enough cold water to make runny) for our fairy cakes, then let the children decorate the cakes themselves, with extra sweets for the toppings!!!! Keeps them quiet for a bit!!!!! I use the same mix as curry queen!!!!
