If it helps, I was in the same position, having received the FOS letter at the end of Sep and accepting the LTSB offer.
I gave it till mid-Dec then gave FOS a call, who got back to me in no time telling me the delay was due to the LTSB office dealing with PPI moving from Brighton to another location (sorry can't remember where), and all of the paperwork was currently being unboxed.
Whether totally true or not, I received a cheque on Christmas Eve.
Worth giving them a quick call.0 -

I take it that I'd just need to quote the Complaint Reference from the FOS letter?

Yes the claim ref number on your FOS letter is fine, as they should also have a copy of this too.
If you want to ring them instead of emailing, the tel number we used to use was this one here;

Damn.... keep forgetting to give them a phone, so have sent them an e-mail tonight as follows:
Dear Sir/Madam,
I'm getting in touch regarding a PPI claim I made.
The last correspondence I received was from Financial Ombudsman Service dated 4th November 2010 which confirmed to me that they had received my signed settlement form and that they had written to you to advise you of this.
They advised me that you would contact me directly to finalise the matter and advised me that this may take up to 8 weeks, I've still not heard anything from yourselves yet, so thought I better check what the situation was.
I realise that you are dealing with a high number of these types of claim, also mail was held up due to adverse weather conditions before Christmas and also that the Christmas and New Year holidays would also have held everything up.
Just looking for an update on my claim.

Sorry to hear that, maybe its because they have no end of large numbers of emails to get through, but normally we heard back by the following day.
Was it just the one email you sent them?
Forward this on again if you can, and I don't think they open on a Saturday, the number I posted in one of the above posts, I believe work in office hours, unless someone else knows of another contact to them.

Well I forwarded that same e-mail on to them AGAIN to make sure that it did send - never got any sort of reply to confirm they got the e-mail, but come to think about it, I don't think I did the last time.0
