Back from shopping and popped on here before starting the cleaning!!
here it is
1 leek
2 carrots
1 red pepper
1 400g tin chopped tomatoes with herbs
1 vegetable stock cube
1 200g tin butter beans
1 400g tin chilli beans- slice the leeks, peel and dice the carrots and core and deseed the pepper
- put in a large saucepan, sdd the chopped toms and fill the empty tin twice with cold water. Add the stock cube.
- Drain and rinse the butter beans amd add along with the chilli beans. Bring to a simmer and cook for about 20 mins.
the recipe says it can be frozen for 3 months and that you can add some spaghetti for the last 15 mins of cooking to make it even more filling.
It was really nice and its adaptable to whatever you might have lurking in your storecupboard. I didn't have tomatoes with herbs but just added my own.Do what you love :happyhear0 -
Afternoon all. Nice to catch up with manicure client this morning who is also a friend from chorus. She's bitten her nails off again (reformed biter) due to stresses in her life, taking on a lot of other peoples' woes. She had a lovely moisturising treatment and went away feeling more relaxed. Job satisfaction high for me today!
Collected tailor's dummy, ds came with me, we then went to the Costco near there for some stuff. Spent quite a lot, but got a lot as well. I had lots of £ left from January and not half way thru Feb's ££ yet, so that's OK. Was pleased to get cheaper baked beans, as they have gone up such a lot in the supermarket.
Now I need to portion up stuff for the freezer and get it all put away. I don't need to cook for the next couple of days, whoopppeeeeee! Don't have to cook tonight either, grrrrreeeeaaat![SIZE=-1]"Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"[/SIZE]

oo thanks taplady! Will have a look in the market for the leek and pepper tomorrow (think I have the rest in ad have been wonering what to do with the butter beans for weeks, if not months!!) and have a bash. Thanks for taking the time to post it!

Trazy - welcome to the thread. They are absolutely wonderful on here, really lovely. Just post when you feel. Some people on here are awesomely good at the old style stuff, and there are those like me who struggle and muddle along, but we are all, I promise, friendly.
Moggins - you are the one living your life. You have the highs, but also the lows. It is human nature to vent when things get tough (do not ask me about dear heart and a door knob!) but not to rhapsodise when things go well. What I think, for what it is worth, is that you can come on here and complain and grumble, but as you talk about your life some things crystallise out, and you find yourself leaning to one thing or another. Whatever decision you make, if you need to make a decision, you can come on here for support.

Evil cat is definitely feeling better - I have just had a stinging scratch because I wasn't cuddling her correctly. I am not sure that I am that pleased she is feeling so well she can scratch me. At least the expensive prescription diet is working.
I had cheese on toast for lunch, and little bear helped me finish it :rolleyes:
Very quiet here, but I can feel an attach of ironing coming on.

Evening all,
Nothing much happening here to-day, had steak etc at lunch time so going for beans on toast or something equally complicated in a while.
We have been watching a GAA ( Irish football) match this afternoon, the rugby has been recorded so that is still there to see this evening, I can knit and watch tv no problem so nice and easy.
Our recycling bin is emptied every two weeks....not due again for 10 days and it is full, wish I could persuade OH to stop buying a daily paper, need to shred it every day for compost but don't always get round to it .
Nice day here to-day, cool but bright, we are going to start walking every day during the week, we have both become very stiff and its not pleasant!
Moggins....you are the only one who can decide if it is worth hanging on or not, hope that you are able to make right decision for you.
Hugs to all who need or want one, hopefully spring is nearly here and we will all feel the better of it

I've had a baking day today. :j Got home from church and blitzed my way through some bread making and did a banana loaf and some scones too.
Hubby is making Roast beef and all the bits tonight.
The children are going to be at their Auntie's tommorrow so I will be making a start on clearing up the garden. I simply cannot wait to get back out there when Spring springs.

HEART SHAPED COOKIES/JAM TART HEARTS
Ingredients make 16 oz shortcrust pastry- 16 oz Plain Flour (all purpose flour)
- 4 oz Butter
- 4 oz Lard (or alternative shortening)
- Cold Water (enough to mix ingredients to a stiff dough)
- 4 oz Sugar
- a pinch of salt
- 14-16 tsps of strawberry jam (or preferred jam)
- Mix flour and salt in a bowl.
- Rub in the butter and lard until you’ve made breadcrumbs.
- Stir in sugar.
- Slowly begin adding the cold water, stirring it until it becomes ‘clumpy’.
- With your hands gather up the mixture to make a ball of dough.
- Turn dough out on to a floured board and roll it out.
- Grab yourself some funky heart shaped cookie cutters, 1 large and 1 small.
- With the large cutter cut 6 heart shapes and put them on your silicone sheet/baking tray.
- Spread the jam over the top of the hearts, leaving about 1 cm from the edge, free of jam. Wet the edges of the hearts to help the pastry topper to stick to it later.
- Roll out the rest of the dough.
- With the large cookie cutter cut another 6 large hearts.
- Place the small cookie cutter inside the large cutter to make a thinner outer heart shape and 1 small heart shape.
- Take the large pastry heart shape and place them on top of the jammy hearts. Pinch the edges down a little to stop your jam escaping when they are cooking in the oven.
- Place cookies into a preheated oven at 230 celsius
- Bake for approximately 20-25 minutes.
- Sprinkle on icing sugar to finish.
