  • what a fantastic loss u had this week jenittels, 4 1/2 lbs is amazing and i hope i have similar results 2moro when i have my weigh in.

    If any 1 is interested i have a lovely recipe for chicken fajitas, its yummyyyy and i love it, let me know if any 1 wants it and ill post it on

    I had my first weigh in last night and have lost 2 1/2 lbs. I was a little bit dissapointed but they do say this no count is a bit slow to kick in with some people , so i guess i have to keep going and hope it does kick in. Better than nothing i suppose.

    Slimming world works for me as i'm a vegetarian and i have a very large appetite. I'm doing the SW diet but am going to Rosemary Conley classes (where they provide a calorie counting diet which i cannot get on with at all) because they do aerobics there so even if i don't lose weight one week then i can still feel like i'm spending the money on something.

    My point is i've been ok following the SW diet on my own. I use my old books (you can get them off ebay or similar if you don't still have yours) and the SW website which provides a syn checker and inspiration for recipes. The website is usually only accessable to members of the classes but there are kind people on the forums that go to the classes then post the group password so the rest of us can use it. When you combine that with this forum where there are lots of people who will support you, offer advice and recipes it works. I will recommend that you try and make time to go and get weighed somewhere like boots or similar. My scales are unbelievably inaccurate and if i wasn't getting weighed in at the RC class then that's what i would do. Only weigh in once a week (if you can pick a time that you can commit to each week then that might be a good idea).

    I think i spend more time cooking and shopping for food now i'm on SW which sounds like it may be a problem for you but you could try it for a couple of weeks and see you manage it. Then you could maybe try WW or simply count calories or something for a couple of weeks.

    Elaine, every loss is a loss. I know it's disappointing for your first week as we always want a huge loss for that. But as long as it's steady and it's in the right direction, it'll be taking you nearer to your goal ;)

    I had a terrible day visiting Liverpool yesterday, ate all the wrong things even tho I had made plans to help me to be good. Then this morning I ate the last of the chocolate bar and some snack a jacks. I am so cross with myself. Also my skinny sis in law is coming at Easter - they stay at a hotel but eat with us. I really didn't want to see anyone until our holiday in August and feel upset that she is coming. I think that this is why I have been bad. The diet has not been going well, I feel insecure and cross because my plans have been scuppered. In tears feeling sorry for myself..glad I could post & let it out. Off to have a good SW lunch now...hope to feel better later & post a happy report. Bless you all.

    Chicken fajitas

    INGREDIENTS

    283g / 10oz chicken breast fillets, boned and skinned
    juice of 1 lime
    1 tsp dried oregano
    1 tsp dried coriander
    Fry Light for spraying
    2 large onions, thinly sliced
    1 red pepper, deseeded and cut into strips
    1 green pepper, deseeded and cut into strips
    1 garlic clove, crushed
    1 red or green chilli, deseeded and finely chopped
    salt and freshly ground black pepper
    4 x 28g / 1oz soft tortillas
    4 tbsps very low fat natural yogurt
    2 tbsps chopped coriander leaves
    lime wedges, to serve

    for the Salsa:
    2 garlic cloves, roasted in their skins in the oven
    3 tomatoes, skinned, deseeded amd chopped
    ½ red onion, finely chopped
    1 red chilli, deseeded and chopped
    2 tbsps chopped coriander leaves
    juice of ½ lime

    INSTRUCTIONS

    1. Cut the chicken fillets into thin strips and put them in a bowl. Pour the lime juice and herbs over the top. Cover and chill in the refrigerator for at least 30 minutes. Mix the salsa ingredients together in a small bowl, cover and set aside.

    2. Spray a heavy frying pan or cast iron grill pan with a little Fry Light and heat it until really hot. Add the chicken strips to the pan and cook them, turning frequently, over a high heat, until they are cooked and golden brown. Remove and keep warm.

    3. Add the onions, peppers, garlic and chilli to the pan and cook quickly over high heat, tossing them occasionally, until they are tender and slightly charred. Remove, season with salt and pepper, and keep warm.

    4. Warm the tortillas and divide the cooked chicken and vegetables between them. Top with a spoonful of yogurt and some chopped coriander, and then roll up. Serve with lime wedges and salsa

    I tend not to bother with the salsa, i have mine with rice, and count it as syns :) and if im having it on a red day i use 4 chicken breasts and its free anyway
