Hi, don't normally post on here very much, but had a few weeks of not doing much planning due to illness so I seem to have ended up with cupboards and freezer of random stuff!, so now trying to get back in to it, so thought I would post! I've done my plan for the next 3 weeks and bought everything I needed today, here is my plan for next week:-

Mon - HM cheese and onion pie (from freezer), mushy peas, mash
Tues -HM Chilli (from freezer) and rice
Wed - BIB fish in sauce, potato, frozen green beans
Thurs - HM leek and potato soup, herby butter pitta bread
Fri - Spag bol ( will cook a big batch on Fri)
Sat - Tapas for our "valentines meal" - not exactly sure what yet - will have to buy a few extra ingredients for this, but cheaper than eating out!
Sun - Mushroom, peppers and cheese omlette, jacket sweet potato

    Desserts if fancy:- jelly &icecream/angel delight/fruit smoothies/ yoghurts/fruit & icecream
Breakfasts:- Mixture of shreddies, HM smoothies , and porridge
Lunches :- Mixture of sandwiches, HM l&p soup, mozzarella/pasta/veg salad

This might sound like a daft question, but I'm new to this so happy to sound daft! :p

How do you come up with your meal plans?

That first comment made me smile :D

Some time ago I made a list of what I have in my cupboards and frezer. I keep this updated. At the beginning of the week, I look at that and see what we have that needs using, and then add to that what I need to buy.

I then keep a running Word document with my meal plans for a couple of weeks ahead, and add recipes I'd like to try to the top of that.

angelnikki's plans are always worth a look - she colour codes her so that she has a mix of veggie, mince, fish, etc meals - so it's really well balanced. I've pinched loads of recipes from her, too!

Hope that makes sense, Penny, x

Well it's a veggie dish "butterbean and leek bake" that I just serve with smoked pork sausage - but think any sausages would go well.

It's a good food weight watchers one... Serves 2

Heat oven to 190C or 170C fan oven.

Spray low fat oil on a non stick pan. Add leeks and add 3 tbsp of stock, cover pan and cook for 4 mins or until tender. (says 250g leeks but I didn't bother weighing them :o)

Meanwhile tear up one med slice of bread and whizz into crumbs. Mix with 40g grated half fat cheese.

Add tin of drained butterbeans to the leeks. Then add 2 tsp wholegrain mustard, approx 150ml stock and season. Stir. Tip into baking dish. Cover with cheesy crumbs and bake for 15 mins till crisp.

It's lovely and apparently 3 WW points per serving if anyone wants to know what it says ;) Obviously adding sausages changes that somewhat :rotfl:

OH wants more cheesy crumb topping next time ;)

Many thanks. I was looking for a recipe to use up butterbeans and have leeks in the fridge.
