This is week 4 for me and I think I'm getting into the swing of it.
So here goes:
Mon: Chilli dogs, beans and chips.
Tue: Bo-Peep pie.
Wed: Crispy topped fish rarebit with 8p noodles.
Thur: Carrot & coriander soup. Mr BE's cauli dish from freezer.
Fri: Chicken curry, rice and naan.
Sat and Sun: Eating out.

Sausage Squish Squash (sausages roasted with butternut squash and baby toms in a cream, chilli and white wine sauce) and rice

Sure! I have wheedled recipe out of DBF so credit has to go to him
To make a good size portion for 3 people (2 sausages each):
6 sausages
1 medium size squah
1/2 pot of Single Cream (we use Elmlea so leftovers last longer)
Big handful of baby tomatoes
1 (chopped) clove of garlic
1 (chopped) dried chilli or 1/2 medium fresh chilli
1/2 glass of white wine
Sprinkling of sage
Sprinkling of grated nutmeg
Splash of Olive Oil
1) Preheat oven to Gas Mark 4 or 190C
2) Peel and seed squash then chop into cubes about an inch big
3) Boil squash for 10 minutes
4) While squash is cooking, lightly brown sausages in frying pan or grill (be careful not to cook too much!)
5) When sausages are lightly brown put them and the now par-boiled squash into a medium size pyrex/le creuset/ceramic baking dish.
6) Pour cream into dish avoiding sausages (so they won't get soggy!)
7) Add wine and the glug of oil to the dish
8) Sprinkle tomatoes, sage, nutmeg, chopped garlic, chilli, salt and pepper over the whole lot to taste
9) Put in oven and bake for about 45 minutes. It is ready when the edges of the squash start to brown and sauce is nice and gloopy!
You should end up with nicely cooked sausages, lovely caremelised squash, and soft cherry tomatoes that burst when you eat them (hence the squish!). Serve with rice and/or salad. If you want to bulk it out a bit you can add potatoes or exchange sausages for chicken :T0 -

Thursday darling daughter is cooking chicken curry ( I'm having chicken casserole out of the freezer )
Friday darling hubby is cooking fish , veg and jacket potatoes
Saturday steak baguettes, mushrooms, onions and chips plus chocolate fondant for pudding ( well it is valentines day )
sunday - christmas dinner ( well we've got left over turkey in the freezer, and I will make up home made sage and onion stuffing with all the trimmings )0 -
Hello all - my meal planned was a relative success last week - just went a bit wrong on Friday with a bag of chips and curry sauce from the chippy instead of the plan.
This week's meals are....
Sunday - roast chicken (veg sausages for me), carrots, peas, roasties, parsnips and yorkshire puddings and blackcurrant chessecake for dessert (left over in freezer from Xmas)
Monday - leek and potato soup and dumplings, curry from freezer for OH
Tuesday - veg 5 bean chilli
Wednesday - tuna pasta bake and garlic bread
Thursday - veg 5 bean chilli, fish (salmon/trout) and veg for OH
Friday - jacket potato, beans and cheese
Seem to be craving stodgy comfort food this week - that's hormones for you!0 -

Monday - More HM Chicken/leek pie with roast potatoes & sweetcorn

Can you tell me how you do your chicken and leek pie? I will be doing a pie this week and I have some frozen leeks (if its ok to use those)
Am late with this but need to meal plan as I am challenging myself to not buy any groceries till earliest Friday....
Today - was Leftover Moussaka with peas for us and sausage/mash/peas/gravy for the kids
Tuesday - Roast Chicken, Sweet potato wedges, carrots, peas
Wednesday - stir fry pork and peppers with hoi sin and spring onion sauce, noodles, egg fried rice..(me and dh) Kids FishFingers, Chips, Beans (as I have ds friend after school and this is all she will eat :eek: )
Thursday - Chicken Pie with lo chicken from the roast & mash or chips
Friday - Beef Casserole with roast potatoes (me, dh and ds) littlest ones will have pasta with a cheese and tomato sauce...

Hi All,
I usually try and do a weekly meal plan and do my shopping accordingly. This month (mine starts on payday 15th) I was thinking of trying to do a monthly meal plan and shop (apart from milk etc)
Here are the problems I have to get round:
I work, I get up at 6-ish and rush round like a blue a**ed fly getting DS (age 3) dressed and myself out of the door for 7am. I get home with DS around 5pm and we need to be eating by about 6.15 latest. He is pretty good at eating most things though.
DH suffers from IBS and terrible heartburn (IBS symptom) so we are restricted. Red meat is generally a no, no and for some reason mince does it too. I've tried all sorts of mince, pork, beef, lamb, turkey. He is also not keen on fish and now tells me he is going off pasta. I usually buy a chicken for Sunday roast and we'll have it again twice in the week using up the left overs.
Even though I only plan on a weekly basis, I am finding we are getting stuck in a rut with what we eat. It's not that I want to be adventurous as such but be varied and healthy.
Here's a general descritption of what we already have:
Roast Chicken + veg
pasta bake with left over chicken
Crumbed pork chops with baked pots
Fish & chips
Liver & bacon & mash
Gammon, egg & chips
Pie & veg (although last couple of times gave DH heartburn)
Chicken curry
Sausage & mash
Pizza
Southern coated chicken and rice
I can't think of anything else we have...can you lovely people please give me some idea's? I know we can double up on meals over a month but I don't want to keep repeating the same thing week in week out.

Have you got a slow cooker? Can you bung all the stuff for a chicken casserole in it before work?
What about an easy risotto? I've done a chicken, muchroom and spinach one (using ready cooked chicken) in about 40 mins or so?
Enchiladas (using chicken) are a fairly quick tea
Chicken and leek lasange (I know its pasta, but it's not mince!) I might have a recipe for this kicking around...
How is he with sausages? Toad in the hole - with yummy roast veggies, sausage and tomato pasta
Fish - in a spicy tomato sauce and new potatoes etc (just for a change)
Chicken and noodles in a sweet chilli sauce?0
