I don't do meal plan in the 'usual' sense. These were my menu in the last few days
Mon - Pan fried lamb chop with aubergines and brussel sprouts
Tue - Salmon, aubergine and tomato lasagna (failed attempt
)
Wed - Pork chop with brussel sprouts
Today - Cous cous in fish and tomato soup0 -
Have you got a slow cooker? Can you bung all the stuff for a chicken casserole in it before work?
What about an easy risotto? I've done a chicken, muchroom and spinach one (using ready cooked chicken) in about 40 mins or so?
Enchiladas (using chicken) are a fairly quick tea
Chicken and leek lasange (I know its pasta, but it's not mince!) I might have a recipe for this kicking around...
How is he with sausages? Toad in the hole - with yummy roast veggies, sausage and tomato pasta
Fish - in a spicy tomato sauce and new potatoes etc (just for a change)
Chicken and noodles in a sweet chilli sauce?
I have got a slow cooker but it's very old as it was my Mum's. I tried to do a chicken casserole this week but I didn't turn it up enough when I left so it was all cold and uncooked when I got home. I then turned it up and went out for about 3 hours and came home to the smell of burning and DH hadn't even noticed.:mad:
We have toad in the hole (home made) it's a good thing to make as DS loves yorkshire puddings and sausages! lol I also make risotto and paella. DH wont eat leeks which is a pain.
I like the sound of the chicken and noodles in a sweet chilli sauce. Do you have the recipe? I think I'm going to have to look on the cookery thread and get some idea's.

Can you tell me how you do your chicken and leek pie? I will be doing a pie this week and I have some frozen leeks (if its ok to use those)
Am late with this but need to meal plan as I am challenging myself to not buy any groceries till earliest Friday....
Today - was Leftover Moussaka with peas for us and sausage/mash/peas/gravy for the kids
Tuesday - Roast Chicken, Sweet potato wedges, carrots, peas
Wednesday - stir fry pork and peppers with hoi sin and spring onion sauce, noodles, egg fried rice..(me and dh) Kids FishFingers, Chips, Beans (as I have ds friend after school and this is all she will eat :eek: )
Thursday - Chicken Pie with lo chicken from the roast & mash or chips
Friday - Beef Casserole with roast potatoes (me, dh and ds) littlest ones will have pasta with a cheese and tomato sauce...
Saturday - dh will cook a nice steak dinner yum
Hi Orchid - the chicken and leek pie is dead easy. Fry off sliced leeks for 20 - 30 minutes add cooked chicken (leftover is fine) two tablespoons of flour about 1/4 - 1/2 pint of chicken stock and two tablespoons of creme fraiche, cook out for about 5 minutes and pour into pie dish. I also add chopped bacon if I have and fresh thyme. Top with puff pastry - delicious.
P.S. I think frozen leeks should work fine.0 -
Naomim you should get a copy of Ainsley Harriott's Meals in Minutes isbn 0-563-55166-6. There are some good ideas for speedy meals in here, including veggie ones.0

For the next few days.....
Today -Fish pie or fishcakes. Made with smoked haddock and leftover mash. Served with watercress, orange, red onion, red cabbage salad and sweetcorn.
Saturday -Beef goulash I have red peppers to use up. Served with baked poatoes. Rhubarb crumble- made with local forced rhubarb
Sunday -Roast cockerel, roast potatoes, parsnips etc. Rhubarb crumble
Monday - Chicken pie
Saturday and Sunday lunch will be hm pate and toast and/or soup0 -

Heres mine :
Fri - Grilled pork chops, roast butternut squash and sweet pots with pecans and blue cheese, broccolli and cookies.
Sat - M&S valentine special for treat. DDs having pasta bake from freezer
Sun - Going to Mum and Dads - Hopefully any leftovers coming home with me as usual. !!
Mon - Chicken Korma, rice, naan and jelly and ice cream
Tues - Pasta with pepper and lamb sauce from freezer. Yogurt and fruit
Wed - Fishpie from freezer, lemon sponge from freezer and custard
Thurs - leftover meal using bits from fridge or freezer with pasta or rice.
Breakfasts - cereals, toast, juice.
Lunches - cheese, egg or ham rolls, beans or eggs on toast, various fruit.
A low spend week for me

Sun - pork chops, potatoes, veg
Mon - Corned beef hash
Tues - sausage pasta bake

Thurs - Egg & chips
