    Pasties - lentil and squash, seitan and vegetable, or TVP mince & onion.
    (but this is pretty high fat with all the pastry so may not be the healthiest idea)
    Sandwiches - but with what in them? Hummus and salad just isn't going to cut it in cold weather.

    Pasty ideas: veggie cheese, onion and mash. refried beans (use a tin for corner cutting) and ripe avocado. A bought veg pate mixed with mashed potato is a nice combo in pastry.

    I use a rapeseed oil pastry sometimes so although still got fat in it, it is "good" fat and is better than buying them.

    Sandwiches - my children and hubby take: peanut butter (alone, or with hm jam, or with salad, and I like tomato chutney and peppery green leaves with mine), vary the hummus flavours like pea and mint or red pepper and vary accompaniments such as chutneys and the salads (sliced tomato, grated carrot and olive, leaves etc), lentil or bean pates, veggie cheese, just silken tofu spread onto marg makes a nice veggie cottage cheese-like filling.

    Hi,

    I can't remember if it was on this thread or the vegan hampers thread but thank you to whoever mentioned the vegan marshmallow company. I treated myself to some at Christmas and they were soooooo nice. Expensive but delicious.

    We flavour our houmous too, during the winter we have it with grated carrot and beetroot with some hot chilli relish or chutney and heavier bread, makes it seem more substantial. Our favourite pasty filling at the minute is curried chickpea and veg, yum!

    ive just started to read this thread and as a vegan who is becoming lazy and unmotivated.....this is just what I need!!!....I know organisation is the key and I'm working on that one:-)

    getting my shopping under control and have just started to meal plan which is working really well.

    I got paid today so I'm going to do a big shop tomorrow and then hopefully small shops each week for the fresh stuff (well thats the plan!)

    So plan number one is to read the thread from beginning to end:-)

    Oh and I would like to lose some weight and be healthier too!! (but one step at a time:-)

    Thank you so much for all the replies and ideas for lunches and things. Also, it's so great to hear about all the new and newly inspired vegans out there. I really think the number of vegans around seems to be rising all the time!

    Aimme13 - just to let you know the index isn't complete. I compiled it a few years ago and people have add a lot more since then. I may go back and work on it at some point.

    Not sure if its any use to anyone but i went to B&M today and they had Alpro single crem (longlife).....(except it has quite a short life:-) for 19p!!! I find them nice to use in creamy sauces....bargain so I bought 4:-)....the date was March 2013 on them
  • Vegan food diary - 26/1/13

    Breakfast: Chickpea flour omlette with ratatouille and potato filling

    Lunch: Smoky bean wraps x2
    This was a spur of the moment invention and totally delicious. OH and I had two each because they were so more-ish.
    Tortilla wrap
    Cooked beans of choice (I had just cooked a batch of white beans) - about 3 or 4 well-heaped spoonsful.
    Bacon flavour salad toppers (those weird crunchy veggie bacon crumbles you get in the salad dressing aisle)
    A good shake of chipotle tabasco
    Mushroom, lettuce & cucumber
    Mayola & mustard
    Salt & pepper

    Dinner: Tarka dal, bombay potatoes & chapati (eating out)
  • I only discovered chickpea flour omlettes recently and they're a flipping revelation I tell you. The mixture can be used for thin french-style omlette for filling with stuff, pouring over delicious potatoes and vegetables for a spanish omlette or tortilla, or for creating the southern-French classic 'Socca' a sort of flatbread.

    1 cup chickpea flour
    1 cup water
    1 1/2 tablespoons olive oil
    A little salt
    Optional: any herbs or spices you fancy. If you've got black salt which is sulphurous and thus kind of 'eggy' that can be a nice addition if you miss eggs.

    Whisk together. Allow to sit for approx 30 minutes or more (this will happily sit in the fridge overnight which is how I came to use it for breakfast).
    For thing omelette - Pour into a hot frying pan and cook briefly on each side.
    If you're making a thick omelette or tortilla you will need to stick it under the grill to cook the top.
    Alternatively pour into a well greased baking tin and pop it in the oven.

    Easy chick-peasy.
