Update on Mr Nice Guy's lemon meringue pie - we're all tucking into it now and you can't tell the difference between it and the 'normal' sort. It's yummy.
It sounds incredible, I can't wait to try it but it doesn't sound particularly diet friendly! I had an amazing vegan lemon meringue pie in a vegan diner in Boston this summer (http://www.veggiegalaxy.com/index.html)....OH said it tasted just like the real thing and we could not figure out how on earth they made it. Will be interested to see if this recipe turns out similar!0 -

I was thinking that too - I really miss lemon curdI think I'd use less cornflour though as it's not really spreadable as it is, but I'm sure it's easily tweakable.

As an occasional treat it will be fine. Both my DH and I really enjoyed it. My children have never eaten lemon meringue pie before - DD1 enjoyed it, DS found it too sweet, and DD2 didn't really enjoy it - so there was more for the rest of us :rotfl:
I'll make it again, but only occasionally. I'm trying to have a soup and pudding evening every week, so this will be one of those which I rotate into the menu.
I find measuring in cups very fiddly, so I weighed everything out. I can type up the amended recipe if anyone is interested?
Just a couple of thoughts - Australian tablespoons are 20ml, whereas ours are 15ml (according to my various Australian Women's Weekly cook books anyway) which might be confusing otherwise.
Another thing, I didn't have any agar, so opened a sachet of vege-gel. To be honest I would imagine it would set without it anyway, so won't be bothering with it again.
At the end of the recipe he says it would be best to double up the meringue - don't. You'll just end up with twice the amount of meringue you need.0 -
Well, I've just been browsing through this thread and I'm amazed to find that it has been four years (four!) since I made the decision to go vegan.
And, yes, I still am vegan. :j
Anyway, I thought I might resurrect this thread for a while as I browse through my old thoughts and see what's changed, and chronicle some of what I now eat and drink as a (relatively speaking) 'old-hand' rather than someone brand new to the diet. I'm also (always) on the hunt for some lovely new recipes and need a good smack round the head to get me back on the frugal-wagon after a very splurgey Christmas.

I thought I'd try and post some of my day's meals to demonstrate the sort of thing I'm cooking and eating. So, today:
Breakfast: My special porridge mix.
I make up a batch of individual pots of the dry ingredients roughly once a week then each morning all I have to do is empty the contents into a saucepan, add one cup of water, let it cook and add handful of raspberries.
1/3 cup porridge oats
1 tbsp soya protein powder
1 tbsp wheatgerm
2 tsp truvia
1 tbsp chopped dried apricots
3 brazil nuts, chopped
3 almonds, chopped
Snack: The last of the chocolate chilli brownies with a cup of tea.
Lunch: Leftovers
Linda McCartney sausages (already cooked and sliced up) and new potatoes reheated in a dry frying pan and served with saut!ed vegetables (savoy cabbage, mushrooms, tomatoes and garlic).
Dinner: Homemade bread and Chickpeas Provençal
A light stew of chickpeas, aubergine, tomatoes, onion, garlic and red wine. With fresh bread, still warm from the oven to mop up all the juices.0 -
Just curious twinkle_star, where do you get your soya protein powder, I could only find whey protein powder in H&B. I would like to get some to add to daughter's smoothies and cereal, especially the one who got the dreaded Norovirus over cmas, she lost alot of weight and doesn't seem to be bouncing back.No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!0

My H&B does stock it so yours might be able to get it in for you if you ask. Otherwise I get it from myProtein online. It's a fair investment for one of the big bags but lasts for ages. I'm contemplating switching to rice or hemp protein next time.
I hope your daughter gets better soon. I once had a flu virus and ended up with post-viral fatigue for years. Healthy food can do wonders to make you better though. I think it was the thing that really helped me shake it off in the end.0
