Going vegan......old style?!

  • Breakfast: Porridge mix, OJ & tea

    Lunch: Leftover hash
    This isn't a pretty dish but it's usually one of my favourites. Pretty much a Bubble & Squeak crossed with corned beef hash. Leftovers from last night's dinner roughly chopped and fried with some added tomatoes and served with chilli-garlic sauce.

    Snack: Apple

    Dinner: 'Meatloaf burgers', sweet potato wedges, saut!ed cabbage and leeks with mixed seed sprinkle (sesame, sunflower & poppy seeds all crushed up in pestle and mortar).
  • Does anyone have a good idea for some tasty and filling vegan lunch box foods?

    My OH has decided he'd like to try going a bit more towards veganism and obviously I'm really keen to help him do this. The key issue he has is things to eat at work. I generally have whatever we ate for dinner for my lunches as I have time and space to eat lunch at work and I only need a simple lunch.

    However, he's got an active job in a busy and cold warehouse so needs plenty of food and it needs to be easy to eat as they rarely get time for a proper lunch break (he'll happily take leftovers from dinner but they often come home again as he's reheated them and then been interrupted before he's had a chance to finish/start).

    He also generally needs two meals - one as a sort of 'breakfast' at about 8am and one for lunch.

    So, anyway, I need some ideas!

    My main thoughts are:

    Pasties - lentil and squash, seitan and vegetable, or TVP mince & onion.
    (but this is pretty high fat with all the pastry so may not be the healthiest idea)
    Sandwiches - but with what in them? Hummus and salad just isn't going to cut it in cold weather.
    Homemade veggie burgers in a bun with salad
    Vegan quiche - again with fatty pastry though

    Any thoughts?
  • Buy him a food flask and fill it with stews, soups, couscous, baked potatoes and topping, curry and rice, stir fry and noodles etc.etc.

    My 3 teenaged daughters are all vegan, got very fed up with sandwiches no matter how many spreads and combinations I came up with. I was getting worried as they were only taking fruit and ryvita for lunch. They are not allowed to heat up food in college, so this seemed to solve the problem. They also take granola and rice milk in one of those containers for cereal if they have forgotten to eat breakfast.
    No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!

    Breakfast: Two slices HM multigrain bread & Pure spread, one with peanut butter and one with marmalade.

    Lunch: semi whole wheat pasta, HM tomato sauce and peas.

    Snack: Mixed nuts

    Dinner: jacket potato, LM sausages and baked beans.
  • I read from other vegans that there is a site called Vegan Lunch Box that has lots of ideas. Bento boxes are fun too, there are lots of ideas online.

    I'm lucky in that I never get sick of eating food based around sandwiches, pasta or rice!:D I should branch out more and try some other foods.:)
  • Vegan quiche - again with fatty pastry though

    You can make vegan quiche without pastry. I haven't made these ones but I have tasted them at a party and they weren't bad.

  • Just thought you'd all be impressed to hear vegan daughter had to bring a cake to college to sell as a fundraiser. Daughter is not a baker, by any stretch of the imagination, but with a bit of help from me followed a recipe and made a vegan chocolate cake. It appears most of her friends simply bought a cake. She texted me at lunchtime to say the whole cake sold in 15 mins even though she charged double what the other students where charging for their cakes, and nobody believed there was no milk, eggs or butter in the cake.
    No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!

    Eighth Anniversary Combo Breaker
    Here's a tasty vegan sarnie filling I make sometimes, freezes well too if you want to make more at a time, this quantity fills a medium size ramekin dish, does about four sarnies spread thickish - 75g red lentils, add 250ml boiling water in a small saucepan, cover and simmer till cooked (about 15-20min, stir now and then while cooking and add a little more water if needed), leave to cool down then add a teaspn (or more if you like) of toasted sesame oil, a tablespoon of tomato puree, salt and pepper, a couple of sun-dried tomatoes chopped small, a dessertspoon or two of either breadcrumbs or milled flaxseed (costs more but good source of omega 3 and can also add to soups, smoothies, casseroles, porridge etc) to thicken, can also add some chopped fresh herbs (basil or parsley both nice) and/or a teaspoon of toasted sunflower or sesame seeds if you like. Keeps well for a few days in fridge, cover dish with clingfilm so it doesn't dry out.
