    I'm still looking for a meringue nest-type recipe, because I miss those a lot! I tried the recipe on the back of the egg-replacer packet but it did not work at all and that stuff is expensive. I was thinking of experimenting someday with a macaroon-type recipe with baking powder and agar flakes maybe for the raised outer crust and chewyish centre... anyone have any ideas?

  • Not sure if this has been posted before but I have recently been making vegan lemon curd after spending years looking at it longingly in the shops! Don't know why I didn't search for it earlier, but the recipe is easy and keeps a couple of weeks in the fridge.

    My sister and I were raised vegetarians, she has now been a vegan for about 5 years.
    I have always eaten very little dairy as I just didn't like it and am beginning to suspect that I might be at least a bit intolerant too, I'm looking to cut down/out the dairy and start trying out the alternatives.

    Looking forward to learning more from this thread along the way. :)

    I am shocked by what I have learned recently. I have been veggie for several years and though I was doing a good thing, being an animal lover, by not eating meat.

    I have just learned that I am causing animal deaths by drinking milk and eating eggs! I never knew that male calves are shot and male chicks are gassed or shredded just because they can't be used to make money. They are a by product of the dairy industry, only the females are useful (produce eggs/milk).

    I find this disgusting and just as bad as eating meat directly. So I will have to try and go totally vegan. This is going to be tough, as it eliminates many foods I currently eat, eg cheese, yoghurts, milk, eggs, etc.

    I am just wondering if any other vegans read this and can help, and if everyone else realised what goes on in the dairy industry?

    I am vegan and I still eat cheese, yoghurts etc. I found when first turning vegan that you will get used to the taste of the soya versions of these products but it will take a while, and a lot of trial and error. I've found that personally to my taste the best vegan cheese is cheezly mozzarella or edam, or tofutti cheddar slices from holland and barrett, and asda do their own version of cheap soya yoghurts though alpro is pretty much available at most big supermarkets also.

    Also in the free from sections of the supermarket there tends to be vegan pesto and parmezan also, which tend to be quite nice.

    Good luck! Since turning vegan I havent missed anything as if you are craving something you tend to be able to find a vegan alternative (:

    Have a quick search and you will find plenty of vegan threads in here and across the boards :) There are even posts in the yogurt maker thread on HM vegan yogurt.

    I think most people know what goes on, it's why lots of us wish we could eat free range, organic, ethical, locally sourced food or raise our own.

    Actually, are you sure that male calves are shot? That would be the biggest waste of all. I always thought that they were fattened up on milk substitute and then exported to France for veal.

    Once you choose to examine closely a lot of modern, intensive food production methods none of it starts to look particularly good. For the animals or for ourselves. And even some not-of-animal-origin food production is very appealing either. Still, it could be worse: we could live in the US.

    If you're intent on eating a vegan diet ensure you pay attention to the B vitamins, most especially on where you can get enough B12
