    I was just today wondering how I was going to make vegan yorkies.

    What do you use for 'white fat'?

    Where do you buy 'whole egg replacer'?

    You can buy white fat in the supermarkets - Trex would do. I just used normal vegan marg.

    The whole egg replacer can be bought from health food shops. I use the Orgran one.

    Okay, another vegan conundrum....I made some custard using a Bird's powder mix the other day, added some vanilla from a pod, but it really didn't taste anywhere near as good as fresh (non-vegan) custards or even Alpro-soya custard. Are there any other vegan dried custard mixes that actually taste nice?

    I've always used Bird's - I don't know of any other makes of custard powder. I have in the past made my own version using cornflour, sugar and vanilla, as custard powder is just cornflour with colouring. You could make a normal white sauce using a roux and flavouring it with vanilla.

    On the other hand it could be the soya milk you are using which is making it taste funny if it's a strong tasting one.

    It was the blandness of the custard that I didn't enjoy, it was very take-it-or-leave it. Fresh custard in the chiller cabinet, and chilled Alpro have a particular "fresh" taste to them. I've been googling away but every recipe posted seems to be a mix of the same ingredients.

    I'm going to wait for a good offer on Alpro custard and then stock up.

    Thanks for the vegan yorkshire pud recipe - it's something i've never really managed to make as well as non-vegan - shall have to find a source of egg-replacer.
    I make custard with birds powder, but find it nicer made with vanilla sugar rather than adding vanilla direct to the custard. Not sure why it makes such a difference but it seems to!
    Came on to ask if anyone has ever frozen plain yoghurt and de-frosted it to eat normally? Can only buy here in 6 x large pots. I used to make it, worked really well, but have lost my previous source of dried soy milk - does anyone know of an online source??

  • Vegan Chocolate Cake

    2.5 cups SR flour
    1 cup sugar
    2/3 cup cocoa
    2 tsp baking powder
    1 tsp salt
    2 cups warm water
    2tsp vanilla extract
    2 tsp vinegar

    Preheat oven to 180 degrees and line 2 sandwich tins (theywill stick if you don’t line them at the bottom).

    Mix dry ingredients together, add wet ingredients and beatuntil well mixed. Divide into the twotines and bake for 30 minutes. Removefrom tins and allow to cool.

    Frosting

    1 cup icing sugar
    1/8 cup vegan margarine
    1/8 cup soya milk
    ½ cup cocoa powder.

    Beat together until smooth and use to sandwich the cakestogether (when cool) and top.

  • I would like to recommend a vegan cookbook "The Joy of Vegan Cookery" by Amanda Grant.

    This seems to be a no nonsense cookbook - simple ingredients, nutirition info, no glossy pages or photos, just paperback, but 99% of what she uses I believe you could get from a big supermarket, with very little use of substitute meat or cheese.

    As a new vegan cook (not vegan myself but cooking vegan 99.9% of the time for my vegan teens) I would say this is much easier to work with than the 'Vegan with a Vegence' book, which while groovy, was a bit impractical and overwhelming with ingredients that might be easy to pick up in New York, but not my neck of rural UK
    No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!


  • I was in Home Bargain's today and saw they had 'Vegemite' (the aussie version of Marmite) for 49p a jar! Considering Marmite is about 2.79 usually, and yeast extract seems to be quite important for a vegan's diet thought it was worth a mention for vegan bargain hunters.
    No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!
