Going vegan......old style?!

I use chestnut mushrooms in loads of things at the moment, they feel really meaty and filling, as do another fav which are chickpeas. I usually always use a tin of tomatoes as a base and then make it curry, or veggie stock, for flavour. I'm not into Quorn type stuff, but have made OH some shepards pie (using Bisto, but you can get veggie types similar), and some sweet and sour chunks with peppers and rice, this week.0

Justamum - have you thought about doing vegetable pasties? Carrot, sweetcorn, peas, potato etc. Anything you want in it really. You could even make them spicey. Or you could do mushroom and mushroom pies.
Edit - I was supposed to put mushroom and onion pies (doh!)I am a vegan woman. My OH is a lovely omni guy0 -
^^Oh I didn't know that, as I said I don't eat it, and I just used it for OH last week for the first time.0

That's a good idea - I think I'll make some at the weekend and then I can freeze them. I just had an image of a lovely crusty pie with gravy but I couldn't think what to put in.0 -
I need some inspiration. My 6 year old DD said 'not pasta again' when I told her what was for dinner. I admit I do resort to pasta quite frequently. I need some ideas for fillings tasty savoury pies (pastry ones, not ones with mashed spuds on top)
Here's hoping someone can inspire me
Today I made a massive vegetable curry - vegan of course! - of my own devising in my treasured Tefal stockpot. I had gone a bit mad at the vegetable market, bought new potatoes, butternut squash, mushrooms, savoy cabbage and added a kilo of baby leaf spinach which was a wonderful combination. Next time I'm going to leave out the mushrooms and add some chickpeas instead for a really autumnal feast. It would make a great pie filling for pastry-lovers.Value-for-money-for-me-puhleeze!

This makes a nice light date and walnut cake. My ma likes this a lot and didn't realise it was vegan until I took a slice and tucked in so I think that this is a winner :T. I doubt my ma will ever buy another date and walnut cake again :rotfl:Value-for-money-for-me-puhleeze!

I've just had a look at that website, and there are a few yummy looking cakes on it.
I've got a delicious ginger cake recipe which I can post if you want, and I recently tried a chocolate madeira cake which was very nice (oh, and a mango one too!) I'll see if I can find the link and post it tomorrow.
ETA here's the link http://www.meatandeggfree.com/vegan-cakes.html
There are quite a few cake recipes on it. I tried the whole orange cake, but it came out very stodgy - I'm going to try again but using my trusted 10" x 8" cake tin. Last time I tried it in a bundt tin but it wasn't good. I've tried a couple of others in my bundt tin and they've not worked out well, so I relegated the stupid thing to the bin!
The two I have tried on this page are the chocolate madeira cake and the mango cake - I'm going to work my way through a few others too!0 -

I use soaked linseeds as an egg substitute...figure that if I'm going to eat cake, then it may as well be good for me!Value-for-money-for-me-puhleeze!

I'm not vegan myself - as I'm not keen on a lot of vegan foods unfortunately.
I made up a "dish" the other day that would do nicely for vegans though.
I steamed some chopped-up veg and then put that in a casserole dish with sauted onion and garlic mixed in. Put some tahini sauce over the top (ie tahini thinned down with warm water/olive oil/lemon juice and some salt and pepper to season). I then chopped up some tomatoes and put a layer of them and topped the lot with some breadcrumbs and baked in the oven till the breadcrumbs were browned and crisped.
I had thought it might have turned out stodgy - but it was very nice - and I was licking my lips planning to do it again.
Leastways - I now have a replacement for a common default setting of mine for cooked veg (ie cook them and then pour some cheese sauce over them and then those breadcrumbs and bake). I can do tahini sauce instead if I wish:D0 -

mmmm, that sounds nice. I *love* tahini, and usually have it on my morning toast with tomatoes, or made into salad dressing. I like the sound of this, though!R.I.P. Bart. The best cat there ever was. :sad:0
