    This makes a nice light date and walnut cake. My ma likes this a lot and didn't realise it was vegan until I took a slice and tucked in so I think that this is a winner :T. I doubt my ma will ever buy another date and walnut cake again :rotfl:.

    It doesn't cost a lot to make and as there isn't any egg or any animal milk it is great for people with allergies to those (although my ma is fine with those ingredients I don't cook with non-vegan ingredients). You also don't have to have any egg replacer in to make this as it uses very basic ingredients that most vegans use already which is a bonus.
    I am a vegan woman. My OH is a lovely omni guy :D

    A few months ago I bought the e-book "Are you sure that's vegan". The same lady has now done a breakfast one, which I bought. I haven't tried them yet, but there were links to some extra recipes too where she had veganised some meat recipes. The vegan meatloaf muffins are delish. I made some for dinner this evening. Definitely worth making. If I change the recipe slightly is is ok to post it myself for those who are interested?
  • I've just found two free online vegan (& largely gluten-free) PDFs on the Vitalita Culinary Group (VCG) site. They've both got over 300 pages each & contain photos & nutritional info.

    The books are updated regularly but they contain over 150 original vegan recipes. The two cookbooks are:
    - A Taste of Vitality: Nutrient-Dense Cooking
    - Desserts of Vitality: Extraordinary Non-Dairy Desserts

    I'm sure there must be some useful stuff to suit most people in all that lot!

    (I'll also put this on the freebies pages so more people can benefit.)

    I need some inspiration. My 6 year old DD said 'not pasta again' when I told her what was for dinner. I admit I do resort to pasta quite frequently. I need some ideas for fillings tasty savoury pies (pastry ones, not ones with mashed spuds on top)

    Here's hoping someone can inspire me :D
