I was in Home Bargain's today and saw they had 'Vegemite' (the aussie version of Marmite) for 49p a jar! Considering Marmite is about 2.79 usually, and yeast extract seems to be quite important for a vegan's diet thought it was worth a mention for vegan bargain hunters.

I've tasted Vegemite. I'd rather pay the £2.79 for Marmite.:D To be honest the Aussies would have to pay me to eat Vegemite. It's really vile.

LOL I prefer Marmite too, but a few of my kids actually prefer Vegemite, having had it a fair bit while visiting Aussie uncles and aunts, so this deal was great for me.

In a bid to cut down on how much we spend on meat, and also improve our health, I've decided to do more vegan meals.

I can't do vegetarian as Oh will not eat cheese that has been heated, and most veggie meals seem to contain cheese. Nor curries, as Oh isn;t keen on them.

Anyone got any good recipes to share? We like chickpeas, beans and lentils so should be plenty of scope.

Thanks for any recipes and/or links.

The vegan society has some good recipes. Also on the vegetarian society you can search for specific vegan recipes.

4 bean chilli over brown rice. I soak and prepare different types of dried bean...half a cup of eah (usually just soak over night then boil for 90 minutes or so, depending on the bean). Fry an onion and three cloves of garlic with a heaped tsp of cumin and heaped tsp of chilli powder (or omit this is kids are eating and add chilli sauce on adults portions). Fry off a couple of peppers if you like, add the beans, 2 tins toms, a veg stock cube and a little water, bring to boil, simmer until a nice thick sauce.

Lentil spaghetti: make pasta sauce as you usually would (onion, garlic, herbs, a little sugar, tomato puree, tin of toms) then add a couple of handfuls of rinsed red lentils and a veg stock cube. Simmer until lentils are done and serve over wholewheat spaghetti (mine love sweetcorn mixed in with this too...I like mine with wilted spinach)

Hummous and falafel are always a good standby. Plenty of recipes online. I make big batches of both and freeze. Serve in pittas with plenty of salad on a sunny day with a tahini dressing or some chilli sauce.

Italian bean soup with crusty bread from the oven (value pre baked rolls if you don't make your own) and salad...nice in the summer!

Lentil stew/soup; again, plenty of recipes online.

I don't know how you feel about tofu but stir fry with soba noodles and seared tofu (I press it and marinate it in soy sauce, chilli, garlic and ginger first) is a favourite here.

    Vegan Chocolate Cake

    2.5 cups SR flour
    1 cup sugar
    2/3 cup cocoa
    2 tsp baking powder
    1 tsp salt
    2 cups warm water
    2tsp vanilla extract
    2 tsp vinegar

Preheat oven to 180 degrees and line 2 sandwich tins (theywill stick if you don’t line them at the bottom).

Mix dry ingredients together, add wet ingredients and beatuntil well mixed. Divide into the twotines and bake for 30 minutes. Removefrom tins and allow to cool.

    Frosting

    1 cup icing sugar
    1/8 cup vegan margarine
    1/8 cup soya milk
    ½ cup cocoa powder.

Beat together until smooth and use to sandwich the cakestogether (when cool) and top.
Thanks for the recipe, but I'm eying it with suspicion. Is there really no fat / oil involved in the basic cake mix?

Baba ghanoush is also a good recipe, and another way of using the tahini.
