Hi All,
Could do with some advice about baking cakes without eggs please.
The buns are wet and uncooked in the middle but crispy on the outside and they sunk. I didn't know how much egg replacer to use. It said 60g per egg but that's too small an amount for my scales to measure so I used a heaped teaspoon??
Anyone give me a good fairy bun recipe with or without the egg replacer and tell me how much to use. As long as I don't have to weigh a little amount ~ my scales just aren't that acurate
I'm a really good cake maker so I'm a bit cheesed off that I made such a hash of these
Me too, tried two sponge cakes yesterday (I didn't have internet access so couldn't go on here for any last minute advice :mad:) and I'm blaming my failings on the egg replacer.
I'm thinking my scales are out of kilter too - basically the mix was too heavy.
I'm determined to blame anything but myself
Hubby realised how disappointed I was and has forwarded me couple a links reminding me that you mix dry and wet seperately, then mix, anyone else heard of this? I think I have tried it with other baking before and it's worked.
I do have a recipe for sponge cake from here, but I couldn't find it.
Am much more of a savoury cooker than a baker I think!0 -

Hope this recipe helps. It uses oil and bicarb as the raising agent. I've used egg replacer before and never been happy with it. But I have used oil and have made some yummy sponges

Also sponge puddings done in the microwave are tasty too. I usually make a plain sponge but at the bottom of the bowl add syrup!

Vegan cakes are dead easy to make.
2 cups SR flour
1tsp baking powder
1 cup sugar
(1/4-1/3 cup cocoa powder)
1/2 cup oil
1/2 cup orange juice
1/2 cup soya/rice, etc milk
2 tsp vanilla essence
Sieve your dry ingredients together
Whisk the liquids together, then mix well into the dry ingredients.
This makes about 24 small cakes, or one 10"x8" cake, or an 8" round one.
If you haven't got orange juice, make up the liquid with water or milk to 1/2 cups, then add a couple of tbs of vinegar (any - I've even used balsamic in a chocolate cake)
You can add a couple of tsp of ground ginger, then ice with a lemon glace icing - yummy
Orange essence and/or the grated rind of an orange is always nice.
It's simple, foolproof, moist, light and tasty. Much nicer than anything you've ever had made with eggs!0 -

Temperature is 180C. I usually do about 20 minutes for the small cakes and a bit longer (maybe half an hour) for the big cake, but do check with a toothpick (or spaghetti which I use - Linda McCartney tip)

Those cakes sound gorgeous, I'm going to give them a whirl on Thursday night and then if DD loves them, will make a few batches for her birthday party next weekend.
I've finally decided to make the switch from vegetarianism to veganism after reading about the planned horrific dairy factory yesterday, my conscience won't allow me to 'put it off' any longer. I've ordered a "new vegan" pack from V!va which I hope will give me good information and took out some great vegan/dairy-free cookbooks from the library yesterday.
(However, I think I may start off being a bit vegan-lite as I think there will be a few things in the cupboard containing dairy ingredients, so I need to use them up for financial reasons and because I've already bought them so have already committed the 'crime'......does that sound half-hearted of me? Hope not....)
I will still have to buy dairy products for DD but don't plan on buying eggs again if the cake recipe turns out deliciously for us.0 -

I'm really pleased it came out ok. It's a brilliant recipe - very adaptable. Apple and cinnamon sounds nice - did you just put chopped apple in it?
I made a puree of apples and cinnamon and added 2 cups of it, then used vinegar in lieu of the cup of orange juice as you suggestedIt's really good. I might up the sugar a little next time because the bramleys and vinegar are both more of a sour flavour than is in your original (and I had no vanilla essence!)
