I am glad i'm not the only vegan reading her thread. I did offer to test any vegan recipes, not sure if there will be any. However I have been thinking along the same lines as you, infact it all started when weezl had the 50p thread. I shall have to see if I have any of the original documents that I started. May of been lost when we had computer problems. Will PM you if I find any. I have read plant based nutrition by Stephen Walsh and summerised it, if you want a copy of the document. Then you can make sure all his recomendations are in it.

Hi guys.
Excellent ideas so far. I'm thinking we should include some kind of sunday dinner item to replace meat. I'm not sure whether the budget will stretch to many nuts so possibly some kind of bean/lentil loaf. Does that sound palatable for dinner with roasties?0 -

I can't find my full document with all my frugal vegan mealplans and costings. However I can find a lot of recipes and info from weezls 50p challenge on the vegan options. This is what info I have with the 2008 costings. All the recipes will be in the 50p challenge. Some of these may be usual for the healthy plan. Others may just be of interest as you wasn't vegan at the time.
Beans on toast =11p
slices of wholemeal toast (with linseeds in the bread) spread with brazil nut and almond butter 13p
Houmous sandwiches 3p
Lentil pate sandwiches 3p
Pesto sandwiches 4p
Guacamole sandwich 8p
HM malt loaf 1p
Tomato Dahl and rice, 20p
Penne with tomato and rosemary sauce
Pasta pesto
Spiced Lentils with sun dried tomato with rice 24p
Chickpea and Potato Curry
saag aloo with rice and/or chappatti 17p per meal
pea dopiaza with rice and/or chappatti 20p per meal
sour apple bhajee with rice and/or chappatti 13p per meal
pasta with pesto 36p per meal
or gnocchi 25p per meal
Spiced Lentils with sun dried tomato and rice, 24p per meal
4 bean salad and rice or potato wedges - 23p per meal
tomato dahl with rice - 16p per meal
Tomato Dahl and rice, 20p per meal per person
nettle bhajee with rice, 14p
green olive tapenade
caramelised onion tarts in walnut pastry,
pasta with green olive and tomato sauce,
tomato dahl,
lentil and sun dried tomato casserole,
chick pea and potato curry,

Hope this helps. I plan to cost up my regular meals and see if any will fit into this sort of plan. Not sure when I will get time though, as I have extra hours at work this week and next.
I will help if I can of course, perhaps testing vegan recipes for the plan

I've looked and looked, but can't seem to find any recipes for savoury vegan pancakes for tomorrow, and I was wondering if any of you lovely people had some recipes?

If you look at post 1119 I posted the Vegan Society pancake recipe for the normal flat, thin ones. You can add a savoury filling to them if you want - personally I just like lemon juice and sugar0 -

Hi Tracy
For savoury pancakes I do 4oz gram flour, one cup of water and a little salt. Heat some olive oil (if you have it) nice and hot and pour on a thin layer of batter, when it has set turn it over. I usually do it til it browns a little and it seems to stick less then. Lovely with sweet chilli sauce.

How about silken tofu, whizzed up with some soy sauce, mushrooms and onions? Or maybe scrambled as a filling rather than whizzed.Life is not a dress rehearsal.0
