Just been thinking about Easter coming up. This will be the first Easter for Tadpole 1. She was BRILLIANT at Christmas and didn't have anything that wasn't suitable. I was really proud of her for not giving in to temptation.
Anyway, was wondering if there are any Vegan eggs available in the mainstream shops? She will really miss Cadburys Creme Eggs, as will Ibut I like Frys chocolate cream which are similar. She doesn't like dark chocolate and alot of suitable chocolate is dark so that's a pain.
Anyone got any nice Vegan Easter ideas? oh and what do you do about pancake day?? batter without eggs and milk?? Anyone??

I don't know if there is any milky style (rather than dark) vegan eggs about this year. The links on this page may come up with something. There has been simpsons ones in the past, but they are like the dark chocolate the company (Kinnerton (Confectionery) Company Ltd) makes anyway. There is always a maya gold one, but again thats dark. I would do some searching for you, but as I gave up chocolate as a new years resolution and have only caved in once on 1st feb when I saw the new white buttons (which are lovely and how I remember the white bars to be)I had better not look!

There is a vegan pancake recipe on my blog also. To make it easy for you to find, I have put a link to the recipe in a new post today.

I guess you could also make your own if you get a mould and fill with lots of homemade chocolates or make or buy a papier mache one and fill with chocolates.
There is sometimes vegan chocolate bunnies as well.

Hi my daughter is allergic to eggs - in pancakes I either use egg replacer - Holland & Barrett do this or you can use mashed banana or plain soy yoghurt - silken (not firm) tofu works too.DMP 2021-2024: £30,668 £0 🥳

The Vegan Society recipe for the normal thin pancakes is:-
250g plain flour
100g soya flour
500ml soya (or any other) milk
4 tsp oil
Sieve the flours together, then whisk in the milk and oil. (I usually add a bit more milk to get the right consistency - I find this a bit on the thick side). This should make about 10 pancakes (I've doubled the recipe from the site as I don't think 5 is enough!)0 -

Hi All,
I didn't know how much egg replacer to use. It said 60g per egg but that's too small an amount for my scales to measure so I used a heaped teaspoon??

Vegetable Cutlets
For about four, you'll need:
2 waxy potatoes
2 carrots
2 handfuls of frozen peas
1/2 a tspn cumin (ground)
1/2 a tspn ginger (ground)
4 tablespoons polenta or dried breadcrumbs
1 tbspn olive oil
Peel and boil the potatoes, cut into large chunks, until they are tender. Place a little water (~ 200ml) into a pan, add the carrots and boil for twenty minutes, until very soft, adding the peas half way through. Leave to cool but do not drain. Add the potatoes to the carrots and peas and mash thoroughly, but don't blend. Add the spices and season as you please. Leave the mix in the fridge for half an hour to firm up, then shape into patties and coat with polenta or breadcrumbs.
Add olive oil to a large skillet, heat up and fry the patties over a medium-low heat for five minutes, so that the edges are crisp. Stick into a bun.
You can freeze these before frying to save them for later. Waxy potatoes mean you don't need egg to bind the patties. Charlotte will do, anything sold as a 'jacket potato', Maris Peer (*not* Piper).0 -

Hi all,
I'm trying to help out with Weezl's challenge over on another board. Basically she's trying to create a monthly meal plan for a family of 4 that is healthy and costs around £100 (for the whole month). Essentially I want to try and give some thought to a vegan version. So what I'm looking for are some seriosuly frugal but very healthly recipes. We're looking for at least 7 portions of fruit and veg a day with plenty of protein, calcium and iron.
I'm guessing that due to the price constraints we're going to be looking at a lot of bean and lentil recipes rather than meat replacements.
Anyway, any suggestions?0 -

What a great idea. I make lots of bean stews and the like. A few that spring to mind are split pea swede and potato soup, curried lentil and veg. soup, cabbage and chick pea soup, bean and barley stew, dulse stew, lentil quinoa stew etc.
Unfortunately I am rubbish at writing up recipes/amounts but if that sounds like what you're looking for I'll have a go. I'm totally useless at pricing too...
