Going vegan......old style?!

  • On Wednesday I did a slow cook meal with soya mince, onions, carrots, parsnips, peas, sweetcorn, lentils, tomatoes and potatoes. In all it cost less than £2 for all the ingredients. I've already eaten 4 portions from it and have enough for another 4 :eek: (I need to freeze some of it really). This means that it cost less than 25p per portion! I have been adding curry powder or chilli powder when reheating it (as it's rather cold here and it helps keep me warm) but the amount I used couldn't be more than 1p's worth of these spices. It contains nearly 2 and a half portions of vegetables per portion so not bad either.
    I am a vegan woman. My OH is a lovely omni guy :D

    hi everyone.

    This thread has kept me amused over a long weekend as im snowed in at home and my hubby is snowed in 300 miles away :(

    My hubs decided he wanted to eat more vegan a few months ago, im a veggie so thought fine but he falls on and off the wagon from meat eating, veggie and vegan!Now we have got xmas out of the way we want to start eating healthily. I am a veggie and couldnt go vegan as i love cheese and milk to much! hubs drinks soya milk tho still eats cheese and we use soya butter. Trouble has been finding some recipies to suit! I have now trawled through the thread and found lots of nice recipies tho as we dont have a big budget, plus he works away all week so i need to bulk cook on a weekend to send away with him. I have realised that because he eats less dairy so do i and i have yet to have a cold. I am asthmatic and have normally had at least one severe chest infection/pneumonia by this time and nothing yet!

    Question for you all, i want to make my hubby the vegan malt loaf from here but cant seem to find no egg or soya flour, what else can i use??

    Just found a recipe for some Greek Christmas biscuits that I was given over the festive season and I wanted to post it here before I lose the recipe somehwere in all my piles of paper. These are AMAZING! So without further ado:

    Greek Christmas biscuits (but so good they're worth making all year)

    INGREDIENTS
    2 cups oil
    1 cup sugar
    1 cup orange juice (plus a little brandy for festive cheer)
    1 cup fine semolina
    1 kilo soft flour
    1 ½ teaspoons baking soda
    Lemon and Orange zest
    Crushed walnuts
    Simple syrup: In a pot, mix together 1 cup each of water, honey and sugar and some ground cinnamon and cloves. Bring to boil while stirring constantly. If you don't eat honey - which i don't then I think you could just use a normal golden syrup warmed and mixed with the spices a little water to thin it a bit.


    Preheat oven to 200c
    1. Beat oil well with mixer, then add the sugar, both zests, orange juice, semolina, and then, a little at a time, the flour mixed with the baking soda.
    2. Form the dough into small shapes, as the pastries will get quite big while baking. Make sure the oven is hot before baking, otherwise the pastries will flatten. Bake for about 30 minutes until pastries are firm and golden brown.
    3. When completely cooled, arrange in rows in a pan and pour warm syrup over them. Sprinkle with crushed walnuts.

    Mash half a banana or put in a heaped tablespoon of peanut butter for an easy vegan egg replacement.

    Divine have withdrawn a batch of dark chocolate that contains milk! Any vegans might want to check if they have any of this batch.

    Hi All,

    Could do with some advice about baking cakes without eggs please.

    I just made some choc muffins and they were a dissaster, and then some fairy buns and they were rubbish too!!

    The choc muffins were made with the "hot water and melted butter and syrup" mix that Thriftylady posted and it came from the Margurite Patten book, and for the fairy buns I used egg replacer. The buns are wet and uncooked in the middle but crispy on the outside and they sunk :o. I didn't know how much egg replacer to use. It said 60g per egg but that's too small an amount for my scales to measure so I used a heaped teaspoon??

    Anyone give me a good fairy bun recipe with or without the egg replacer and tell me how much to use. As long as I don't have to weigh a little amount ~ my scales just aren't that acurate :(

    I'm a really good cake maker so I'm a bit cheesed off that I made such a hash of these :o

    I posted the recipe I use on post 787. It works really well, and is very adaptable - the other day I made pineapple and coconut buns with it!

    Just been thinking about Easter coming up. This will be the first Easter for Tadpole 1. She was BRILLIANT at Christmas and didn't have anything that wasn't suitable. I was really proud of her for not giving in to temptation.

    Anyway, was wondering if there are any Vegan eggs available in the mainstream shops? She will really miss Cadburys Creme Eggs, as will I :o but I like Frys chocolate cream which are similar. She doesn't like dark chocolate and alot of suitable chocolate is dark so that's a pain.

    Anyone got any nice Vegan Easter ideas? oh and what do you do about pancake day?? batter without eggs and milk?? Anyone??

    Vegan easter eggs could be a bit of a problem - I don't like dark chocolate, and have gone off chocolate completely since becoming vegan. I used to be a chocoholic who could polish off three :eek: kingsize :eek: mars bars in a day :eek::eek::eek:

    Anyway, pancakes are much easier. The Vegan Society has a brilliant pancake recipe which I use all the time. If you google their website you should be able to find it. If not I'll find it and post it later. I usually add a bit more milk than it says in their recipe as I find it a bit thick.
