    I know you want a pie, but haddock is so nice can I suggest you try this instead?

    Ingredients:
    1 Tbsp. Butter
    1 Tbsp. Olive Oil
    1 Small onion, diced
    1 Small, head fennel, trimmed, cored, and very thinly sliced
    1/4 tsp. Dried basil
    1, 14 1/2 oz can Diced tomatoes
    1/4 cup Pitted olives, coarsely chopped
    1 1/2 lbs. Haddock Loins
    1/4 cup Grated parmesan
    1 cup Shredded mozzarella cheese



    Directions:
    STEP 1:Preheat oven to 350 degrees. Grease a 13x-9 inch glass baking dish
    STEP 2: Melt butter with olive oil in medium skillet over medium-high heat. Add onions, fennel and basil and sauté until vegetables are tender, about 10 minutes. Stir in tomatoes and olives and simmer 5 minutes to thicken slightly.
    STEP 3: Place fish in prepared dish. Pour sauce over fish. Sprinkle with cheeses.
    STEP 4: Bake 25 minutes or until fish is cooked through and cheese is golden.

    It's very lovely! I highly recommend it.

    If you lend someone a tenner and never see them again, it was probably worth it.
  • I made fish pie last night - got the recipie from the free Somerfield magazine so not sure if I am allowed to copy it onto here so if you have a Somerfield near you pop in a pick up the magazine. The recipie was for cod but Im sure it wouldnt make a difference to use haddock. I used cod as it was reduced in Tesco.
    Oh and it was lovely - got 5 portions out of it even though it stated 4 portions. I had it for tea last night and tonight, packed up 1 portion for my Nana to have for lunch today and froze 2 portions for later.
    Am going to have a good look at the recipies already posted on this thread now to see if anymore take my fancy :)

    Instead of a white or tomato sauce I use pureed sweetcorn with a little of the cooking stock. You can use ayy type of sweetcorn (frozen, fresh, tinned etc), just cook slightly for a couple of mins in the micriowave then bang in a blender & wizz until pouring consistnacy.

    Can I just chip in with mine (well, I say mine. It's not, but it's the one I make)

    Chop an onion and a carrot and fry in a little oil until soft
    Add half pint of double cream, lots of grated cheddar, a spoon (or two) of wholegrain mustard and the juice of a lemon.

    That's yer sauce

    Boil some spuds (five large, chopped), along with a couple of eggs for 10 minutes. Steam some spinach in a collander on top of it

    Put your fish in a oven proof dish (I use half cod, half smoked haddock)
    Pour over your sauce.
    Slice your egg in to four and place on top
    Add your spinach
    mash your spuds and put on top

    stick it in a high oven (gas 6/7) for 20 minutes, until the top browns

    We have enough to eat the following day, too (it IS that nice)

  • Am hoping to make a nice fish pie for tea tomorrow, one with mashed potato on top. Have had a look throught Squeaky's Mega Thread but can't seem to find anything :confused:

  • I make a relly simple one once a week to get a good portion of fish :)

    I pack of ASDA valus fish in sauce (frozen) - 84p

    This, or another frozen fish in sauce is good. Use one portion for each adult.

    4-5 medium/large potatoes

    1 carrot for each adult, broccoli and other veg for preference

    I use a steamer to cook the potatoes, carrot,brocolli and fish (its boil in a bag but steams relly well in the bag too :) ), then when they are done, take the fish out of packets and put in the bottom of a large oven dish. place the carrots and other veg on top of this. Mash the potato with a little milk or marg, adding a bit of pepper. Smooth this on top of the pis, grate a little cheese on top if you like it, and finish it off in the oven for 10 mins on 200 degrees or gas mark 6.

    Hope that helps!!

    You could also cook fresh fiish in a steamer and make as above, using some cornflour, water and parsley to make a simple sauce :)
  • Smoked fish fillets, such as haddock
    Milk
    Mashed potato
    Boiled egg sliced (omit if not liked)
    Plain crisps

    Put fish fillets in some milk with some pepper & bay leaf, slowly bring to boil and simmer for a few mins. Allow to cool, flake fish then put in casserole dish with liquid (removing bay leaf). Top with sliced egg, then with mashed potato. Cover with very squished packet of plain crisps. Bake in oven for about 20-25 mins.
  • This is a lovely recipe I found, it was sooo yummy, not sure about money saving though....

    Basically cube your fish (half normal -half smoked is good, if feeling exuberant add some prawns too -yummy -but makes it quite expensive. Put it at the bottom of a fairly deep dish (lasagne type dish), the make a basic white sauce - nice and thick, add squeeze of lemon juice, and some chopped parsley and season it too, pour over fish, put mash potatoe on top, lashings of grated cheese and bake for 45 minutes - delicious, may have to go buy and the ingredients now !
