I either use a tin of campbells mushroom soup or just double cream for the "sauce" for my fish pie.
Lately I have got into following the Jamie Oliver fish pie recipe & it's fab:
Finely chop carrot, onion & celery & fry til soft. Add pot of double cream & hadful of grated cheese. That's your sauce.
Meanwhile boil your potatoes ready for mashing. Hard boil your eggs in the same pan.
Chop fish into bite sized pieces (can be raw), put into oven proof dish, pour over sauce, add quartered HB egg & a layer of spinach. Top with mashed potato & bake in oven til cooked through & golden brown on top.
There are so many variations to this - add prawns, crabmeat or any other type of fish, leave out the eggs or spinach if you don't like them. I've also missed out the cheese & it's still nice. Not a low calorie dish though! You could substitute the double cream for white sauce made with skimmed milk for a lower fat option.0 -

Eggs definitely go well in fish pie. Here's my recipe, sorry I haven't included quantities, I just sort of guess them as I go along.
Ingredients:
Any fish ( I used a combination of white fish/salmon/prawns)
Milk
Grated cheese
Hard boiled egg
Frozen peas
Mashed potatoes
Method
Poach the fish in milk
Remove the fish and arrange it in a deepish serving dish
Add quartered hard boiled eggs and frozen peas to the dish
Use the milk (that the fish was poached in) to make a white sauce
Add grated cheese and black pepper to the sauce and pour over the fish/eggs/peas
Top with mashed potato
Pop into a hot oven for 20 mins or until the potato is golden0 -

Famous fish pie. - Serves 4
Ingredients
50g/ 2oz.
Butter
500g/ 18oz, Preferably filleted and skinned.
Fish
425ml/ 3/4 pint.
Milk
1
Onion
500g/ 18oz.
Potatoes
Method
method: 1. Peel the potatoes and cut into quarters. Put in cold water and bring to the boil. Boil for 25 minutes and drain.
2. Add the butter, a tablespoon of the milk and a good pinch of salt and pepper. Mash thouroughly.
3. Chop the onion, see: skillsbynumbers 02. Put it in a saucepan with the rest of the milk and the fish. Simmer for 10 minutes over a medium heat, making sure that it does not boil over.
4. Drain off the liquid. Break the fish into lumps, discarding any skin and bones. Place the fish with the onions in an ovenproof dish. Put the mashed potato on top.
5. Place this in a hot oven at about 200*C for half an hour or until the top has gone crisp and brown.0 -

Sorry this is a bit late for your tea (hope it turned out ok!). I always put hard boiled egg in my fish pie. I buy whatever white fish is cheapest plus a small amount of smoked fish as that gives it extra flavour. Microwave the fish just for a few minutes on Medium with a bit of water. It oesn't need to be fully cooked, it'll finish off in the oven. Meanwhile, make a cheese sauce, well seasoned with salt & black pepper and some grated nutmeg. (This ones good for using up cheese that's past its best). I also put in sliced mushrooms if I have them. Mix the flaked fish, eggs & mushrooms into the sauce. Top with mashed potatoes and grated cheese and bake for about half an hour, Gas mark 5, until piping hot & golden, serve with peas or other green veg - Yummo!
