The pork recipe is one from on here and the rice is just peas, chopped peppers, mushrooms if I can find any, maybe carrots and onion all diced really small, fried off, add rice, stock, any spice I've decided on that goes with the main and turmeric if necessary (DS1 (6) will only eat yellow rice as white or brown rice is 'vile':rotfl:) and cook for as long as necessary - most of my recipes are like this, including what the children call my 'looks about right' soup:D"I married beneath me, all women do." - Nancy Astor 1879-1964

I don't usually contribute much and my meals are very plain and boring compared to some of yours! I work 3 days per week so things need to be quite easy. However, thought I'd post my meal plan (I have only just started doing this again after a break of several months) and if anyone wants to give me any tips on how to make it more interesting please feel free!!!
Monday: Spaghetti Bolognaise
Tuesday: Bacon, eggs and chips (I have bacon in the freezer left over from Christmas)
Wednesday: Chicken with veg and new potatoes
Thursday: Sausages and cheesy pasta (from a thread I started earlier!)
Friday: Chicken and sweetcorn home made pie made from today's left over roast chicken.
Saturday and Sunday the children are at ex-dh's so I rarely eat those days! (Perhaps a bowl of cereal or some toast or something!!)
I am sure a lot of you will be horrified but I ALWAYS buy ragu for the spag bol. I've tried making my own but it always comes out really watery and tasteless so any tips on that would be appreciated too!

well this is the first time i've posted my menus so don't expect anything exciting! I've been a bit sloppy with my meal planning - which resulted in having to go to supermarket on Saturday afternoon...with DH and both kids in tow, an expensive way to do it! so hopefully joining this thread will encourage me to be a bit more organised! anyway less waffle...
Monday Chicken Curry
Tuesday Beef Casserole (in slow cooker)
Wednesday Dahl and Rice (for adults) Tortellini pasta (for kids)
Thursday Sausages and Veg
Friday Pizza (hm)
Saturday Roast Chicken- crumble or cobbler for pud
Sunday Chicken pasta bakeweaving through the chaos...0 -

Well, I'm boring too. It's a good quality to have. Very predictable. Anyway, my sauce is something like this. In a non-stick pan put a splash of olive oil Fry a chopped onion in it. Then throw the mince in and cook until it is very brown. Include some chopped or grated carrot with the mince if you like. Put in two tins of chopped tomatoes and herbs and 1 teaspoon salt. The secret ingredient is a tablespoon or two of red wine. Now turn the heat down and cook very slowly until it all amalgamates.
My meals for this week are
Monday - squash stew and rice or bread, depending on how runny it is. Coffee cake
Tuesday - chicken in gravy found in freezer, mash, carrots and green beans. Coffee cake
Wednesday - shepherd's pie found in freezer, Xmas cake #2 and cheese
Thursday - bacon and pasta thing, lemon meringue pie to use up lemons
Friday - kedgeree?, lemon drizzle cake
Saturday - pizzas, chips, chocolate, wine
Sunday - could be hosting MIL, not sure
Lastly, why not save single portions of food from the week to eat up at the weekend? We do this for lunches0 -
I often plan a week's menu, but this is the first time I've planned it with money-saving in mind...
Sunday - Spicy Salmon with mash, carrots and brocolli
Monday - Chicken Curry
Tuesday - Steak + Kidney Pie with veg
Wednesday - Spaghetti Bol (will also have 2 portions to freeze...)
Thursday - OH choice. (I go out to do Brownies, so cooking is up to him!)
Friday - Jacket Potato, sweetcorn & mayo & cheese
Saturday - Chicken Fajitas
Sunday - Roast (or meal at in-law's, not sure which yet)
Any leftover veg from the week will then be used to make my bendy veg soup!Natwest CC - [STRIKE]£2545[/STRIKE] now £0 :j
Overdraft - £2668 - to be cleared by February 2010
