Excellent substitute for double cream.

Mash broccolli and mix in creme fraiche, yummy and a bit different. Swirl it into the top of soup. Put in mash or jacket potatoes. Dip tortilla chips into it.0

Makes an easy instant sauce: eg add to cooked mushrooms for a sauce to go with chicken or to serve with pasta. Add to leeks with some mustard; creme fraiche with mustard and/or mushrooms is also good with pork...many other combinations just use your imagination.
Also nice drizzled into soups just before eating (in the bowl) - especially tomato and makes a nice pattern in the soup too.

instead of sour cream on mexican dishes
i use it for making the suace for Fish pies
its great for pepper/ mushroom type sauces for meats

Ohhhh one of my favourite ingredients! Actually I love to squeeze some lemon juice in it and then dip bread sticks in it. Yummy. :drool:Be careful who you open up to. Today it's ears, tomorrow it's mouth.0

salmon parcels
take a largeish square of baking parchment
place one salmon fillet in the center
on top of the salmon add........
two dollops of creme friache, a handfull of defrosted (or fresh) peas, two very thinly sliced mushrooms and a good sprinkle of dill.
pick up two opposite sides of baking parchment together and roll down towards the salmon. tuck the ends of the rolled up baking parchment underneath the parcel you have created, then shove into the microwave for about 3 mins on high.
voila! you will have a beautiful salmon in dill sauce with peas and mushrooms.
serve with either new potatoes, salad or baby roasted potaoes.
