    Its been so cold today just when I could have done with staying in we had to go to the 2 mums, well, OH went to his mums and I went to mine.
    I took the shopping in for mum and did her housework, which didnt take long as she lives in sheltered accommodation in a 1 bed flat now, so I can whizz around and get it done in no time, then sit and chat over a cuppa :D

    I put the SC on for Dinner tonight a lovely chunky stew. OH got back around 1 o'clock with his mums washing so I shoved it all in the WM before we went out again, called in to some friends on the way back and had a cuppa.
    I had a text earlier and we are off out again in a bit to another friends, its her birthday so we are going over for a drink and a slice of birthday cake....I bet its christmas cake with a candle on.....:rotfl: :rotfl: :rotfl:

    Well, you could be a hospital dentist or work in research!! I'm in the army though :D . Some people I qualified with aren't actually dentists anymore, one is a social worker so there are lots of options!!

    Just bought a drink each in Boots before the cinema. We saw Bedtime Stories. The kids liked it!

    Have some potato wedges cooling as me n DH will have fish & wedges for dinner.

    Kids ate, value pizza & garlic bread. Shall be making from scratch from the new year!

    Pink - glad your cat is home, hope she gets better asap.

    Well, I have got the cold/flu - really tired and achy, with weeping nose, eyes and sore throat :(. Thankfully, the next 2 or 3 days at work should be really quiet, so I can chill out a bit (got to go in, as we don't get paid for the first 3 days of being ill)

    Plans for tonight - got to hang the washing on the airers- it has been on the line all day, so is pretty dry already. Going to put together the oil filled radiator I got for Xmas as well.
    The plumber STILL has not been to look at my kitchen sink (he was supposed to be here a week ago). I don't to nag because I know it is the festive season but I am having to do all my washing up in the bathroom sink and it is a pain in the bum!

    I think dinner will be sausage and bean casserole...have not got any potatoes though, so shall have to have rice

    Pink has emailed me to say that it's fine to post the enchilada recipes here. If it's written a bit Noddy style, then it's because they're recipes that I used to use for adult education classes.

    Enchiladas

    This recipe has sour cream as the topping and refried beans and peppers as part of the filling.
    The second recipe is a good one to use up cooked chicken and has rather more sauce with it. Some people prefer their food ‘wetter’ with more sauce. Others prefer less/no sauce. Have a look at the recipes and see which one you would prefer. Don’t forget! If you don’t like the hot chillies, simply leave them out, the recipes will still taste good!


    Mexican Enchiladas (cream topping)

    Tortillas and refried beans are important ingredients in Mexican cuisine.
    2 tbs. olive oil
    2 red peppers, deseeded and thinly sliced
    2 red onions sliced
    3 cloves garlic, crushed
    2 red chillies, deseeded and sliced (optional)
    2 tsp. ground coriander
    2 tsp. ground cumin
    4 chicken breast fillets, cut into strips
    Salt and pepper
    220g refried beans
    4 tbs. chopped fresh coriander
    ½ pt soured cream
    8 flour tortillas
    5oz mature cheddar cheese

    Dish or Tin required Shallow dish or roasting tin large enough to take the rolled tortillas in a single layer.

    1. Heat the oil in a large pan, then add the peppers, onions, garlic and ¾ chilli. Stir-fry over a high heat for about 8 minutes until softened.
    2. Stir in the ground spices, then add the chicken strips and seasoning. Cove and cook for 5 minutes.
    3. Remove from the heat and stir in the refried beans, ¾ of the fresh coriander and 2 tbs. of the soured cream.
    4. Lay the tortillas on a work surface. Divide the chicken mixture between them and roll up to enclose. Place in a large ovenproof dish and top with the remaining soured cream. Scatter over the cheese, remaining chilli and coriander. If preparing ahead, cover and chill for up to 2 days.
    5. When ready to serve, preheat oven to 190C/fan oven 170/Gas 5. Cover the tortilla dish with foil and bake for 50 minutes. Remove the foil and bake for a further 10 minutes until golden and piping hot. Serve with an avocado and lettuce salad.






    Chicken Enchiladas (serves 6)(tomato sauce)
    Do half quantity if 6 seems too much.

    Ingredients
    60ml oil (less if not frying tortillas)
    1 medium onion, finely chopped
    1 clove garlic, finely chopped
    4 fresh green chillies, seeded and finely chopped
    3 tomatoes, skinned and chopped
    1 tbs. fresh coriander, finely chopped
    Salt
    250g/8oz cooked chicken, shredded
    125g/4oz queso fresco (?) Wensleydale, Cheshire or Lancashire cheese, grated
    315ml/10fl.oz natural yoghurt
    12 wheat tortillas

    Oven Temperature 180°C /Gas 4
    Cooking time 20 minutes or till heated through
    Dish or Tin required Shallow dish or roasting tin large enough to take the rolled tortillas in a single layer.

    1. Notes I personally think those four green chillies are rather a lot. Adjust to taste! This is the original recipe. We like lots of sauce so I do 2x or 3x the recipe for the tomato mixture. But not the chillies!

    2. Grease a shallow ovenproof dish. In a heavy frying pan, heat 1 tbs. oil. Fry the onion and garlic until golden brown, stirring frequently. Add the chillies, tomatoes, coriander and salt. Simmer for 15 minutes or until the mixture thickens. Remove from the heat and set aside.
    3. In a bowl combine the chicken cheese and yoghurt; Set aside.
    4. I miss this next stage as I limit the amount of fat in my diet - It’s up to you!
    5. Heat remaining oil in a frying pan. Using tongs, place one tortilla in the oil for 3-5 seconds until softened. Repeat on the other side, then drain in kitchen paper. Repeat with remaining tortillas.
    6. Fill each tortilla with chicken mixture and roll up. Arrange seam side down and arrange close together in the greased dish.
    7. Pour over the tomato sauce and cover the dish with foil. Just before eating bake 20 minutes or until heated through. Please don’t bake at class unless you intend to eat this on Tuesday night! It’s unwise to keep reheating chicken unless you’re particularly fond of salmonella.
    8. Ask about the rules for reheating food! I’m here to teach you about Health and Safety too.

    Very pleased with myself as Ive cancelled my sky multi-room and saved myself over £10 which is better than anything.

    Making it my "thing" to make changes to everything that can be done this new year.

    Many thanks for the recipes! I made pork enchiladas earlier on with a recipe I found on UKFood and my DH was well impressed! What with the salad and rice we had with it, he thought we could have been out in a Mexican restaurant.

    It was an OS meal too - as I only paid 20p for the pork fillet and it had been in the freezer for long enough!! :)

    Just popping in quickly to say hello. Been another busy day in the Soba household. Whilst DD's been out all day and DS's friend has been here for four hours I've had the chance to do a bit of prep for a hastily arranged barbie for N.Y. Eve.

    Made a big, big pot of mushroom soup to welcome our guests tomorrow. Also a cheese and onion flan, but that's mostly eaten already. DH's resurrected the gas barbie and repaired the stairs (don't ask). May try and make Bacardi Mojito for myself tonight, purely for altruistic reasons you understand to make sure it's just right for tomorrow's party:D

    Think that's it for today, just had our first prepack meal for weeks - frozen fish coated in a bizarre garlic and herb sauce, with a tin of mushy peas. Cordon Bleu or what??!!
