Evening all, I've had a rotten day and need cheering up!
I got up with a headache this morning and by the time I got to work I felt crap. Headache, shivers, sore tummy, runny nose, extreme tiredness, and I had to be sick a couple of times. I almost gave up and went home but I stuck it out till 1pm and forced myself to eat my lunch (a baked spud and cheese)
As if my magic after eating it I suddenly felt perfectly fine!
I hope that not being able to keep most of my food down today will affect my weight loss? I have an appetite again now so have just demolised a hi-fi bar and later will make mushroom pasta for tea.
I wish I knew why I have days like these? it happend last weekend and also on Xmas day! my work colleagues think I could have low blood sugar!!!! I hope not but I'm seeing my doctor on Monday to check. They have the internet on computers now?! - Homer Simpson

Hi Kandi
I used this recipe recently from an old Ainsley Harriet book - prep time 10 mins, cook time 10 mins, serves 4;
4 x Turkey/chicken escalopes
2 garlic cloves - finely chopped
grated rind and juice of 1 lemon
2 tablespoons chopped fresh basil or chives (I used chives)
4 slices parma ham (3 syns 28g) or use lean smoked bacon
2 tbl sp olive oil - I used fry light
salt/pepper
Halve escalopes horizontally and open out, season with salt pepper, sprinkle over garlic, lemon rind and chopped herbs. Sandwich pieces back together and wrap with ham/bacon then pin in place with cocktail sticks
Heat Oil/fry light in a frying pan and cook for 4-5 mins until golden brown. Turn over, drizzle with lemon juice and cook for 3-4 mins until cooked through.
It was lovely - really tasty, hardly took any prep time and was really quick and easy to cook.

I have made my chicken breast stuffed with extra light laughing cow triangles, garlic and herbs, then seasoned chicken with chargrilled style seasoning and wrapped it in bacon - its currently in the oven and im dead excited about it!! Thanks everyone for your support you are fab!!!0 -
Hi all. I've used some marinade on chicken breasts but not sure how to cook them - should I grill them and make a mess of the grill or put them in a dish/tray in the oven? Anyone got any ideas???

pop some foil on the grill tray and push a load of holes in it under the chicken breasts. Then grill or do in the oven (with more foil in the tray to catch the drips) and then ditch the foil, saves the majority of the washing up!

Catt - surely tin foil is your friend here...
either line your grill and go for it, or stick them in the oven. If the pieces are 'bite sized' I would go for the grill, if bigger I would use the oven!0 -
Yes they're full sized breasts. My grill is always lined with foil - as you say it saves on washing the pan everytime! I think I will bake them ina foil lined tray. Thanks all. One more question! Do i spray the wedges with frylight BEFORE I sprinkle the seasoning on, or after?0

Hi
Just wondering if any of you SW members use the Easiyo yogurt maker? I managed to get one off Freecycle and I see that in the Syns directory there are quite a few mixes that are free on SW.
The mixes are expensive £2.29 for 1kg of yog but not any more so than when Mullers go expensive. (Incidentally if not already mentioned 4 for £1 in Waitrose at present).
If you are an Easiyoer, are there any mixes you recommend. All I have tried is the low fat Berry flavour as they have a poor selection in J Graves. Thinking of bulk buying them.
