    Thanks! I made these this morning and they tasted so good, just like the real thing! I would have them even if I wasn't on a diet!!

    1 Egg per pancake
    2-3 Teaspoons sweetener (depending on own taste)
    3-4 Drops of vanilla essence

    First separate the white from the yolk and put into separate bowls, Whisk the egg white until fluffy and add the sweetener, In the other bowl add the vanilla essence then fold the yolk into the egg white
    Heat a frying pan with frylight, add the mix and spread as you would a normal pancake after a few mins flip over (But do be careful they are much more delicate than a regular pancake) And then Hey presto scrummy syn free pancakes

    I served mine with fresh blueberries on the top with a big dollop of sweetened 0% Total and used 2 syns on a tblsp of blueberry syrup drizzled over the top - heaven on a plate:D

    Ok how does this all sound for a red day?

    B - hifi bar, "builders breakfast" sandwich (grilled bacon, egg and syn free sausage)

    L - another hifi bar, slice of cheddar cheese, milk in tonnes of cups of tea

    D - Carrot and ginger soup followed by roasted veggies with either more of the above sausages or left over beef in the fridge

    I've also had a piece of shortbread and will later have a fun size twix to keep me going till dinner.

    I know this is short on fruit etc... but I simply cant afford things like that right now!

    Liz, did you use bread in your builders sandwich? If so that is 3 HEB's unless you are going to syn one of them?

    Yep I've counted one of the hifi bars as syns, that plus the small twix I've just scoffed and the piece of shortbread have taken me up to almost 15 syns for the day. Trust me I worked it out this morning!

  • Made the Lemon Mousse terrine from Jan/Feb Magazine. Took it to parents for sunday lunch, it was lovely and only 1/2 syn per serving. Had to use Hartleys lemon and lime sugar free jelly as can not find purely lemon sugar free jelly anywhere, definately worth a go, as quite straightforward to make and certainly does not taste remotely diet like. :D

    2 eggs lightly beaten
    2oz/57g Self raising flour

    1. Preheat oven to 200c, Gas mark 6.
    2. Place blueberries, all bran, sweetener and orange juice in a bowl and stir, mixing well.
    3. Sift in flour, baking powder, and ground spices. Add eggs and mix until fairly well blended.
    4. Spoon into a 6 muffin tin greased with fry light.
    5. Cook for 15-20 mins until firm to touch, remove and either served warm or cooled.
    6. Optional – If served warm add some VLF natural yoghurt and more blueberries.

    HI just made this up for tomorrow , great hot or cold .

    1 packet syn free sausages ( morrisons)
    3 eggs
    1 tub low fat cottage cheese
    1 sliced tomatoes
    mushrooms
    1 pack of bacon chopped

    beat eggs & cottage cheese together , then add all the rest to the mixture , pour into dish ,
    cook on gas mark 5 for 30 min , enjoy hot or cold
