    I am having an Extra Easy day today - menu as follows -

    Breakfast
    French Toast made with 2 slices of HEBfriendly bread, 2 eggs, cinamon and nutmeg and 7grams sultanas (1 syn) served with frozen mixed berries and a pot of greek 0% yogurt with some canderel stirred through to make it sweeter.

    Lunch
    Quiche made with 8 chopped up Morrisons Eat Smart sausages, chopped up back bacon, spring onions, birds eye chillis, chives, 4 eggs and a 250g pot of quark. cooked for about 1 hour at 180.

    Tea
    Gammon Steak, Jacket Chips and 2 eggs.

    Pudding
    Mullerlight cherry layer vanilla yogurt (2 syns)
    meringue nest (2.5syns)

    Snacks
    Mullerlight orange yogurt with chocolate sprinkles (Free according to syn calculator on sw site)
    red grapes (Free)

    Treat:
    Wine
    175ml (6 syns?)
    Total syns for today 10.5 :D

    I've used them 2 or 3 times. Bit pricey and I know pork mince can be used to make homemade sausages, but excellent for knowing they are all syn free.

    Wow, just trying one of the new mullerlight - chocolate orange. Really lush.

    I had a request by pm for my beef casserole recipe, so thought I would post it here for you all, just in case:

    Beef Casserole - free on Red or EE

    700 - 800g lean stewing beef (I use brisket) cut into chunks
    2 garlic cloves, crushed
    2 onions, chopped into large chunks
    3 carrots, chopped into large chunks
    turnip (I often leave this out and add more carrot, and small mushrooms, whole)
    600ml beef bovril stock
    2 tsp dried mixed herbs (or even better, use herbes de provence)

    In a non-stick pan use frylight to brown the meat on all sides
    Transfer into a casserole with all other ingredients, season well. Cover tightly and cook at 170 deg/gas 3 for 2 hours.

    When it is done, I remove the meat and bubble down the sauce a weeny bit to thicken it, but just as easily you could add 1 tbsp cornflour (about 1 or 2 syns) to just thicken the gravy.

  • And, following a request for a completely totally fabulous, easy peasy chicken curry dish (quite mild). Recipe halves really easily if you only need to serve 2, or freezes fine

    Shahi Murgh - free on red or EE - serves 4

    1kg skinless chicken thighs (bone in or boneless - you choose)
    250g vlf or ff natural yog
    2tsp ground cumin
    2tsp ground coriander
    1/4 tsp mild chilli powder
    5 tbsp fresh coriander, chopped
    10 green cardomon pods
    8 cloves
    2 cinnamon sticks
    3 bay leaves

    Season chicken thighs
    Mix yogurt, cumin, ground coriander, chilli, chopped coriander.

    Frylight a large frying pan. High heat, add cardomon, cloves, cinnamon and bay, stir fry for 1 min. Add the chicken and brown on all sides.

    Pour over the yogurt mixture and mix well (it curdles and looks a bit odd, its fine - go with it :D)

    Reduce the heat to low, cover tightly and simmer for 20 - 25 mins. Stir occasionally.

    Uncover, increase the heat and cook for approx 4 more mins to thicken and reduce the sauce (it all comes together quite suddenly)

    Allow to stand for 5 mins, then serve.

    I've got one from the Batterware catalgoue though haven't used it for years. Under SW crisps made like this (I believe) are a 'misuse of free foods' because you wouldn't normally sit and eat the amount of potato's that people use to make the crisps. I'm suessing if you only use one or two potato's it's ok, because you could quite easily eat those for dinner :confused:
