  • Sugar free and fat free cake! I make a basic cake then add various flavours - blueberrys with vanilla essence, rhubarb

    1 tin of chickpeas drained
    5 tbsp artificial sweetener powder - use more if you like it sweeter
    HEB portion of fruit (dried prunes, dried apple, apricot - what ever you fancy)
    1 tsp essence - what ever you prefer and goes with your fruit!
    3 eggs seperated
    1 tsp baking powder

    Seperate the eggs putting the whites to one side. Put everything else except the fruit in a food processor and whiz untill it looks like cake mixture. Put into a seperate bowl. Whip the eggs whites to form soft peaks then fold the cake mixture into the egg whites. Gently fold in the fruit you are using!

    Bake in medium oven (I used my Remoska) for about 30 minutes, If dividing mixture into muffin tins allow about 15-20 minutes.

    Other than 1/2 syn for the baking powder all other ingredients are free on SW. I know some consultants will say this is food abuse and shouldn't be allowed but my consultant said it is fine as long as you are not having loads of cake every day!

    well that just about exactly describes how i felt yesterday, i couldnt seem to stop eating yesterday and felt there was no point as i couldnt do this. today i am giving myself a kick and climbing back on the wagon! for goodness sake i am only wanting to lose a few stones, some of you have lost 7 or 8 (and more stones) so i think i need to get things into perspective and take inspiration from you all!

    RS, i am sooooooo pleased things went well at the hospital, you must be incredibly relieved.

    today i have got up and made a huge bowl of fresh fruit salad that i ca dip into whenever i want a snack and have checked whats in the fridge that needs eating so today should look like this..

    b, wm toast x 2
    l, jacket pot, tuna and fruit salad
    d, some type of potato, bacon and sprout bubble and squeak
    more fruit salad and a muller light.

    is the cake really heavy or does the baking powder lighten it at all?

    I don't find it heavy - dried apricots and almond essence works well together, chop the apricots very small and fold them in when you add the egg whites. Actually the fruit should always be added with the egg whites, I better go back and edit my post:o

    Sorry Vixtress, I have edited my recipe post, I forgot to add the vanilla essence or which ever flavour you like to add. I do apologise!:o

    Also forgot to tell you that because the egg white are beaten first before folding the other ingredients in, it makes a nice light cake!

    Think I've gone a bit over my allotted calorie budget today, but not hugely, and not binged or eaten loads of junk at least.

    Breakfast: apple, muesli - 300 cals

    Lunch: 2 spicy beanburgers and peas (600)

    Snack: apple and w/w dessert (200)

    Dinner: tagliatelle in hm salmon and cream cheese sauce (600)

    muller lite yoghurt (80)

    So about 1800ish today. Dinner mucked things up a bit as I was cooking for 3 and then the third person decided they weren't hungry. So me and OH had a bit extra in our portions. :o

    Feeling quite balanced and well and positive at the moment. Like frogga though, I do get exasperated and wonder when food won't be at the forefront of my mind all the time!

  • Hello everyone - hope you have all had a good day! I like the sound of that cake Marion but why on earth would anyone say it was food abuse?:confused:

    Eating today has been good.

    Breakfast - 2 slices of Warburtons fruit bread, toasted but without any butter or spread. Cup of tea

    snack - small piece of cheese (brie)

    Lunch - pork salad open sandwich on dry wm, muller light

    snack - 2 small wm bread with baby spinach and sliced tomato on

    dinner - mustard crusted cottage pie - I got the recipe off of Market Kitchen - Brian Turner made it and it looked so lovely I had to try it and it was one of the nicest things I have had to eat for AGES. I tweaked the recipe a bit and here is how I did it:

    500g Sainsburys BGTY mince
    packet of diced carrot and swede
    4 large potatoes, peeled and diced
    1 large chopped onion
    3 oxos
    punnet of tomatoes (I just used basics ones)
    pinch of thyme
    salt and pepper
    French's deli mustard (or any mustard, I just love the French's one)
    6 small slices of bread, crusts removed
    Flora or similar spread
    I just browned the mince in a large non-stick pan and added all the chopped veg and "fried" it for about 5 minutes, then I added the oxos, a tbs of mustard, thyme and chopped tomatoes and salt and pepper and about two thirds of a mug of water. I then cooked it for about 40 minutes until the veg were all nice and soft and transferred it to a big pyrex dish. Then I mixed about a tbs of mustard with 2 tbs of flora and spread this thinly onto the bread slices which I arranged over the top of the meat in the pyrex dish. I had quite a bit of the mustard "butter" left so put it in a little lock and lock in the fridge. Baked it for about 20 minutes at 180 and the top went all crusty and it was fab! There was enough for about 5 people I reckon.

    Vixtress and spugz - I know exactly how you feel about not being able to stop eating. For years I have managed to do everything else in my life really well but the one thing I can't control is my eating - it's mad isn't it?

    I just took Angus (our little scottie dog) out for his evening walk and it was so nice not to feel that biting cold - I hope it continues!
