Breadmaking - recipes, hints, tips, questions

    This recipe originally called for pecans as the nuts, but I have just made it with walnuts and very scrummy it is too. You could also use brazil nuts, as I have used those with bananas in the past. The recipe given is for a medium loaf.

    Ingredients

    100 g softened butter
    175 g caster sugar
    2 large eggs, beaten
    200 g self raising flour (sifted)
    200 g peeled, ripe bananas
    85 ml buttermilk (I used ordinary milk)
    1/2 tsp baking powder
    1 tsp nutmeg
    125 g sultanas
    75 g chopped nuts

    Method

    Remove paddle from breadmaker and line the bottom of the tin with non-stick baking parchment ot greased greaseproof paper. Do not put paddle back in.

    In a mixing bowl:
    Cream butter and sugar until pale and fluffy.
    Gradually add beaten eggs, beat well.
    Mash the bananas and add them, along with buttermilk into the mixture.
    Add sifted flour and baking powder.
    Add nutmeg, sultanans and nuts.
    Mix well.

    Spoon into the prepared bread pan.
    Set the machine to 'bake only' setting. Set the timer, if possible for the recommended time. If not, set the timer and check the cake after the shortest recommended time. Bake for 55-60 minutes. Test by inserting skewer into centre of teabread - it should come out clean. If necessary, bake for a few minutes more. (Mine took 1hr 20 mins BTW)

    Remove the pan from machine. Leave to stand for 5 mins then turn on to a wire rack to cool.

    You can decorate by brushing the top with melted apricot jam and sprinkled banana chips, whilst the loaf is still warm.

    Mine didn't get that far - much too nice not to eat straight away.

    Could anybody tell me roughly what size a large wholemeal loaf should be? My MR recipe uses 3 x cups of flour +1 1/4 tsp dry yeast and the loaf ends up about 4.5" x 4.5" and about 4" deep. I always feel I should be getting a bigger loaf but it looks and tastes OK...quite dense but I don't like airy-fairy bread! Just wondered what results other people got......icon7.gif

    sorry ive only just noticed this,i dont do wholemeal bread in mine but i do the sandwich one and i cant remember offhand but its around about the same quantity of yeast per 3 cups of flour as your wholemeal and it comes out like a rock solid heavy cubed shape,so now i put a full sachet of yeast in,think its 7g and its perfect,nice big long loaf.

  • for those who are getting 'cakey' bread results in their breadmaker, can I recommend the following;

    Tesco on-line subbed my usual tesco strong flour, with Hovis extra strong breadflour. Now this is more expensive (anout 45p more) but I needed it so I accepted it. BUT I will use it now as I am getting fantastic bread, even on the fastbake in my MR breadmaker.:j

    I agree with you FS, and think flour quality certainly does affect the outcome of loaves, having experimented with several. I now tend to stick to using Allinson Strong White/Wholemeal and Hovis Granary flours and I've not had a bad loaf yet with these.

    My favourite "everyday" white loaf - perfect for sandwiches/toast - is made from ...

    11/4 tsp yeast
    500g flour
    1 tbsp sugar
    11/2 tbsp milk powder
    25g butter
    1 tsp salt
    330ml water

    ... and takes just 1hr 55mins with the rapid bake on the Panasonic :)
