If you look at the coconoil.co.uk site they explain that the difference between virgin and ordinary is the method of pressings. The ordinary although cheaper is heat extracted and this has an effect on the fatty acids in the oil and makes them 'bad' as they are damaged.

Yes kingshir, that's the one I am using. I bought of the internet site as it is a bit cheaper. Originally I just bought to try but now I am using a 450g every 6 - 8 days so any pennies saved are useful.0

I am NOT saying it gets rid of wrinkles but it does seem to smooth the crows-feet out a little. And since I've been rubbing a little into my nails every night there is an improvement there too (far better than the expensive handcream I'd been using previously anyway).0

Thanks for this link. I was very interested to read that it has been seen to help with IBS and thrush, I don't suffer myself (thank goodness) but have family members who do. Am certainly going to pass this info on to them.
I wonder what it would be like used in baking? Anyone tried it? Does it 'flavour' the resulting cake/biscuit/bread/etc?0 -
Never used it in baking but I do use it for cooking. It's great for making soups (frying onions) and for frying bacon etc. It can be used in place of or alongside butter/oil.
I've seen references here to coconut muffins but don't know if that means muffins with coconut in or muffins baked using coconut oil as a substitute for the veg oil or both.0 -
These are Mercy's Coconut Muffins:
Coconut muffins
Ingredients:
2 eggs
25g butter
2 tablespoons Splenda
50g cup soy powder /almond flour
1/8 teaspoon salt
1/4 teaspoon baking powder
1/2 pint heavy cream
50g unsweetened coconut
1 teaspoon vanilla extract
Directions:
Place all ingredients in blender at one time and blend until mixed together. Mine went very thick.
Place into 6 buttered muffin tins
Bake in a 180-degree oven for about 30 mins
Works out about 3.5 g carb per bun. (using almond flour)
Were better cold the day after0 -
Wow this thread is so informative.
I'm about to embark on a low carb diet as I suffer with IBS and am sick to death of feeling sluggish and having bowels with a mind of their own... I'm really interested in trying coconut oil to help with this as well, I don't need to be more regular as such so worried it might make things worse? anyone know any more about that?
I may use it for cooking as my OH has stubborn abdominal fat and sounds like it could help there too...
