    I have some turkey in the freezer which was cooked on Xmas Eve, kept in the fridge and reheated for lunch on Boxing Day. It then got put into the freezer,(on Boxing Day) but don't know if it would be OK to use for sandwiches,obviously wouldn't use hot again. It's not that much so if it has to be binned it's no great loss!
    Also I found a small dish of turkey fat in the fridge, is this any good to use for roasting like goose fat, or should I just chuck it out?
  • I would use the turkey ;) I also like turkey fat to cook roast potatoes.

    I'll add this to the existing leftover turkey thread to keep ideas together :D

    Hello Everyone

    I'm just being nosy and wondering how many meals you've/ will be making from your turkey if you had one yesterday?

    We had Xmas day dinner - will have some cold turkey tonight for our meal, have enough left over for a delicious turkey and leek pie (Jamie Oliver recipe) and I used the bones and the carcass for stock for some soup. There would be enough for some sandwiches as well but I think we'll all be sick of it by that time - LOL.

    Hi Sally,

    It usually depends on the size of turkey how many meals we get out of it. This year we had a 6kg and have had Christmas dinner yesterday, turkey and stuffing sandwiches last night, the turkey will be used with the ham and stuffing as part of a Boxing Day buffet this evening and the carcass to make soup tomorrow. The rest will go into the freezer sliced in gravy or as pie fillings to use at a later date to stop us getting too tired of it.

    Ours fed 14 for lunch, 24 for tea, we gave a chunk to DSD to take home and we have had sandwiches today, some had beef I had turkey. Still a bit left for tomorrow.

    I bought a turkey crown, it fed 4 yesterday, DD1 took home enough for supper for 4 today, we have had a cold platter tonight with some on and \i have 2 packets with enough for 4 more meals in the freezer. I cooked it Christmas Eve, left it to go cold and then sliced it with the electric slicer.....not thin slices either. We have some stuffing left too which I also froze.....
    Was 13st 8 lbs,Now 12st 11 Lost 10 1/4lbs since I started on my diet.

    We got a turkey crown that said it would feed 6 - 8 (at £18 it will feed more than that!!!!!!!!! :P). It fed 2 adults and 3 kids yesterday lunch. 2 sandwiches today, cold for tea last night plus 5 portions put in curry and frozen, tea tonight and tea tomorrow night. So it will have done 27 meals!

    Ours said it would feed 5-8. So far we had christmas dinner (2 adults, 1 child) and 2 days worth of turkey & barley broth. We're having turkey & stuffing sandwiches, and leftovers in gravy tonight, and there are three more packs of cooked turkey in the freezer (1 curry, 1 pie & 1 lot just in gravy). So that is at least 10 adult main meal portions, 5 child main meal portions, and 6 adult lunch portions. Quantities will be generous.

    I also still have 3 main meal packs and a lunch pack of cooked gammon, which we had last night. So although I spent quite a lot on Christmas meat (around £50), it will have fed us for over a week. I have a weekly budget of £100, so that's not ridiculously more than normal.

    Great cake, really easy.

    Anyone know which book its from? I have looked on the net but can't find out. I find that if I really like one recipe from a book, I like others, so its a good one to buy;)
