As your thread has now dropped down the board I've added it to the existing one on cooking a gammon joint where you'll find lots of tips and advice.
My top tip is to not over cook the gammon as that's what makes it fall apart.

I would cook it either in a large pan of simmering water or in the oven for about 30mins per 500 gms. plus another 30 mins. so an hour and a half in total. I normally buy my joints about that size and a hour and half to two hours normally results in a cooked, but still firm and sliceable joint!
If you havent cooked it in water before, the way you do it is.........
put the joint in the largest pan you have and make sure it is well covered with cold water. bring to the boil on the highest heat. Discard ALL that water then cover again with cold water, bring back to the boil and turn down so that you have a nice fast simmer. then time the cooking.
once cooked (you can check by inserting a sharp knife and feeling how much resistance there is - there should be a little but you shouldnt be 'forcing' the knife through!
to cook in the oven just put into a roasting pan and cook at gas 4 or 5 for the same amount of time.
Then drain the joint put on a plate and cover with foil (at this stage you can take the skin off, leaving the fat and drizzle honey or brown sugar (or both) over the fat.put in a roasting tin then ten minutes or so in a hot oven and you have the most wonderful glaze on your gammon! I do this at christmas and no-one EVER leaves the fat!. you can then rest it for 15 minutes (to allow the meat to relax) and either serve immediately or leave it and serve cold!

As per the title, how long do I boil a 2.5k ham and what is the composition of a honey glaze to finish it off in the oven?

boil for 1/2hr per 500g, but knock off 15mins total time if you are gonna oven bake it too
honey glaze is just honey spread over the top - some people go fancy and add mustard too, or some OJ, but just plain honey will do
hottish oven, and bake till golden
