Thank you all so much for the fab ideas.:D In the end my son just went cupboard and fridge diving ;) and made it up as he went along , it smelt delish and have just eaten and it was as good as it smelt.I know it had lemon juice, honey, brown sugar and garlic in it as he left them out on the side;).Have so much leftovers we will be eating it for a week:eek:.But am I right in thinking that now it has been cooked that I can box up and freeze leftovers.?

You can indeed, gammon freezes really well. :) Make sure that it's well wrapped to help prevent freezer burn.

Deep pan of water and bring to boil then turn to simmer for 2 hours, change the water and bring back to the boil.
Drain and refrigerate immediately if its for re-use.

in cherry coke - lovely. 1/2 hours per 500g once it's started boiling plus a little bit more if its straight from the fridge. :D (mind you soak over night or bring to the boil in water drain and then cook in cherry coke, this removes excess salt)

Then use the leftover stock to cook red cabbage in.

Coke is great, ginger beer is nice. Orange juice works. All must be full sugar though, not diet but cheap will work. pretty well cover the gammon

Boil the [STRIKE]fu[/STRIKE] heck out of it - depends on size but i would do anything for a couple of hours min. THen i wack the oven on full heat, drain gammon, roll in sugar - any colour, stick in oven for 10 mins.

A good glug of sherry in water works too, but it isn't as cheap as coke.

Microwaving works really well for gammon or bacon joints. I use a steamer basket but any deep dish will do. Put the gammon in and add just 1/2" or so of liquid - water, coke, fruit juice, just water's fine, and cover.
The instructions are old, 'Cook on high for 1 minute per lb, then on medium for 12-14 minutes per lb'.
With modern microwaves, I do 1 min per lb on full power, then 13 min per lb on 50%. Test as for a fruit cake, stick a skewer in and if it comes out clean, it's done.

For instance, if joint weighs 1kg, that's 2.2lb. So 2 mins on full, then 27 mins on 50%, and test. If the skewer's clean, take the meat out and slice off a tiny bit to check.

You can still add a glaze of eg honey & mustard and put it in a hot oven for 10 mins or so after that.

I cooked one in the pressure cooker today, I am going to slice it thinly for sandwiches this week.

I just put it in the basket added a pint of water and cooked it for 30 mins at high pressure.

Left it to cool slightly before taking off the lid, wrapped it in foil and once cool wrapped in clingfilm and put in the fridge.

It will be really easy to carve in the morning once it has been in the fridge all night.

    ;)
