DH makes a lush and easy gammon and leek pie. He buys shortcrust pastry, makes a white sauce chops his leeks, gammon and seasons. It looks like a giant pasty and there is always enough left to have some cold next day - yum !!!

My fave recipe with gammon - I think its called suffolk hotpot.
Cook gammon however you prefer then cool and cut into cubes. Make a white sauce and add a teaspoon of mustard. Pour over gammon.
Slice potatoes and boil then simmer for about 5 minutes. Drain and layer on gammon and sauce. Bake for about 30 min until pots are cooked.
Great meal for the freezer too. Just freeze before cooking in oven.
    Yummy!

The first meal with the gammon joint is usually Gammon and either new potatoes or spicy home made wedges served with either salad or garden peas (or whatever really fresh veg has just come out of the garden.
The second meal is usually Pasta with a cheese sauce and Gammon chunked up and stirred in - then breadcrumbs and cheese scattered on top and baked til crispy.
The third meal is either gammon and pickle sarnies or if we want something a bit special then we have crusty French bread spread with best butter, gammon and piccalilli or for me a nice sweet/sour chutney. with a lovely green salad.

You could chuck it into a rissotto or with some potatoes, beans and onions and turn it into a hash.

Ive got Gammon next week :-)

I am about to make write my meal plan for the coming week and need inspiration as to what to make with a Gammon joint I found in the freezer. We are a family of 4 and I am trying to stick to a budget. Any thoughts welcome.

I have added your threads to our main one on cooking a gammon joint. This one may help to stretch it further:
