    I just love fresh beetroot.... I cook them in an old saucepan after washing them... do not CUT off the leaves but twist them off so that there are stalks left on this way they won't 'bleed' when you boil them in water , test with a skewer to see when they are cooked then cool in cold water... the skins will then just rub off ..

    just finished de fleshing the pumpkin :eek: have 2 large tupperware boxes, 2 very large basin bowls and one huge stew pan full on flesh :eek: not many seeds though?

    Will have to get cooking tomorrow-the flesh smells and tastes like melon which me and stepdaughter found really odd? Anyhoo, all recipes including pumpkin MOST welcome!

    Thanks for the tips on beetroot-does it freeze? My nana has a recipe for beetroot soup she is digging out for me too.

    Am knackered now but looking forward to the results tomorrow!

    pumpkin soup

    fry 1 finely sliced onion, 1 grated carrot and 2 tsp powdered garlic till soft, add pumpkin flesh,Fry till softened add water. Cook till all veg is quite soft. Then mash it all together in a blender till smooth.Add seasoning if desired. Voila soup.Is freezable, i do the same recipe with butternut squash.

    Brill thanks for that, Ive seen recipes including potatoes and cream and all sorts-your recipe is just what im after. SD has found 5 recipes in my cookbooks for me too :D going to be eating pumpkin til christmas...2012 :rotfl:

    Seen a yummy sounding recipe for the swede-creamed swede with cheesy crust, Ill be trying that :D

    pumpkin in baking tray. drizzle some oil, sprinkle some salt, and roast in oven 180C about 20 mins or so.
    eat!

    If looking for something different, mix roasted pumpkins into mash when you're making some. Tastes yum.
    Pumpkin pie is great too but may need a sweeter pumpkin than what you've got?

    I wish I had pumpkins this year, I may have to resort to buying some.

    Pumpkin will freeze really well chopped up, you can then cook as needed. I like it bunged in with other veg when making a roast.

    There are recipes around for chocolate courgette cake - apparently the courgette makes it really moist, though I admit I haven't tried it yet.

    I've got a delish beetroot recipe, it calls for puff pastry and goats cheese but is worth it for a treat:

    Cook 350g beetroot as described above and cut into wedges
    Roll out 500g puff pastry til it's 2mm thick, lay on baking sheet and pr ick it all over w fork then bake for 20 mins. If centre rises gently flatten it
    Sweat 3 finely sliced red onions in plenty of olive oil and 2 tbsp water and chopped rosemary, s&p
    Top the pastry w the onion leaving a 4cm edge. Add the beetroot, crumble over 250g goats cheese, season and drizzle w olive oil
    turn up heat to 200c and cook 10-15 mins
    Just before the end scatter 2 tbsp roughly chopped hazelnuts.
    The cheese shd be golden and the pastry not too dark.

    Sounds quite calorific but it's from a running mag and they say it's v nutritious - beetroot helps calcium uptake apparently!

    I make a tomato based soup with butternut squash - same thing really

    Leeks, potato, carrot, turnip or sweet potato, 3 cloves of garlic, pumpkin or squash and a tin of tomatoes, a squeeze of tomato puree and if no chicken stock in freezer then a couple of stock cubes. Cook all in pan diced in even pieces till cooked - I use a pressure cooker and then blitz - wonderful soup - with the squash its a really orange colour and really tastes like tomato soup. great for those who say they dont like squash like my DH and he eats the soup!
    Saving in my terramundi pot £2, £1 and 50p just for me! :j

    Any ideas for these?Preferably things I can freeze as there is enough to feed the 5000-apparently this customer has an allotment and specialises in super size veg-everything is bigger than I have ever seen!

    Help much appreciated :D
