if it is a variety grown for carving (for Halloween) then just bin the flesh. Ones grown for eating are delicious though! Cube the flesh and sprinkle with chili flakes and olive oil and roast until soft and then mash. You can use this in risotto (add at the end) or soup - sweat onion, add pumpkin and stock, cook and liquidise. Yum. :j0

Otherwise, maybe include in something with mixed root veggies, peppers and onions - say a stew or a tagine? Hmm, I have absolutely no idea if it was grown for carving?! Never realised there was so much more to a pumpkin Thanks for all the advice and suggestions!Spreading a little Christmas joy all year round :santa2:0

What I did last year and intend to do this year is make soup. I roasted the pumpkin flesh to add some nuttness whilst cooking, I also roasted a butternut squash (for flavour)and a couple of sweet potatos that were sat looking a bit sad and shrivelled up in the bottom of the freezer lol.
Obviously the different veggies and size peices cooked at different rates so need to watch them-I roasted them with a little drizzle of olive oil and seasoning.
Then I softened a large onion and a bit of garlic, threw in the various roasted veg and enough veg stock to just cover-used kallo organic veg stock cubes, but you can use what you have or even just water. I also added some spices-grated nutmeg and ground cinnamon to give a hint of that bonfire night almost crimbo spiceness.
Once cooked down blended it to a lovely smooth thick tasty soup-taste again and adjust the seasoning if too sweet or salty a squeeze of lemon is good if under seasoned add salt and/or pepper to taste. Was great with a swirl of cream MMMMMM.
