Pumpkin soup is lovely BUT I seem to remember last year that some of these huge pumpkins that were for carving tasted dreadful! You might want to search for some of last years posts before you was time, effort and other ingredients!Piglet

Pumpkin goes beautifully with sage as a herby flavour or chilli/garum masala for a spicier extra.
Pumpkin works really well in a risotto (cube and roast it first for more flavour) just add to a fairly simple base at the end. You can also use a similar roast pumpkin with pasta, had this last week with some of the left over pork from Sunday stir fried in a pan with onion and garlic.0 -

Best use for pumpkin flesh is to feed the compost bin imho, unless you have chickens. They like it. You can roast the seeds in a little olive oil and sea salt too, or save them to grow more pumpkins. Yes you can make soup out of the flesh...but to be honest you'd be better using the stock etc to make an entirely different soup from something that has a flavour already.Val.0

I make these every halloween, as well as soup. This recipe is vegan, but I have substituted dairy milk in place of soy etc. and it seems to work well. They are generally well received! I put a bit more spice in too.0
