I've read about roasting pumpkin seeds before but not done it because I'm a bit puzzled about how you do it/eat them.
do you get the kernals out of the shells before roasting?

I did manage to find the thread about roasting the seeds here. You eat the whole thing Seakay which I found a bit fibrous, but 2 of my kids loved. Full of fibre I should think.0 -
Hello you lucky people. I got pipped to the post for the last big hallowe'en pumpkin in Sainsbury's today as the lady in front of me at the till had bought the last one (for 10p!). I shall have to enjoy pumpkin delights vicariously through you lot until next year.0

I.....
1) Grow two pumpkins on allotment. One for each kid. Give away any extra.
2) Scoop out pumpkins, set aside ten seeds or so. Carve faces on pumpkins. Light candles, place inside pumpkins, place pumpkins on windowsill for Halloween.
3) Next day, place pumpkins and all contents excluding candles and saved seeds in compost bin.
4)Make compost.
5)Next spring, place compost on bed in the allotment. Plant two strongest seedlings grown from saved seeds last year.
6)Repeat till kids have left home.
Note there is no reference here to actually consuming any part of the pumpkin. I think it tastes revolting!Val.0 -

While I like pumpkin and squashes, I'm not sure I could cope with a week of it!

Pumpkin risotto with roasted walnuts, red chicory and gorgonzola

I just peel and take the insides out; and chop up [one pumpkin at a time, I grow loads + lots of other winter squashes]; and leave in the fridge and add to any dishes that I'm using to bulk it up.
Curries; chop into small cubes and parboil and add to the onions before any spices are added
Pastas - ditto
Chillis - ditto
Roasts, add to the pan just like roast potatoes in larger chunks.
Roasted veg; just toss in with the others [had this last night]
However, if they are properly seasoned they can last until March/April - so you can keep them somewhere cool, check weekly and use them up slowly.
I also make a mean pumpkin pie; and soup; and add it to other soups, or noodle dishes - anything really.0
