    I made this recently

    Its an American recipe, that uses canned pumpkin.

    But you can use normal pumpkin..... :D
    Cut up your pumpkin into wedges, and bake.
    Then, when the flesh is soft, scoop out from the skin.
    Whizz the flesh, with a stick blender.
    Then let strain over night, to get that canned pumpkin effect.

    The pumpkin I used, had enough flesh for 3 of these cakes, after straining, so I used one lot and the other 2 lots are in the freezer. :D

    The pumpkin stock that was left, went into a lentil type soup, and was lovely.

    Hi all,

    had a loverly Thai style chicken and pumpkin curry with coconut milk recently and wondered if anyone had a low cal or lowish fat recipie??

    They garnished it with all sorts of fresh things like shredded lettuce, shredded d cabbage and bean sprouts it was amazing!!!

    If you have anything I can try out I'd be greatfull, thanks

    I haven't made it myself so don't have a recipe but if you look on google there are lots of links to recipes that may help.

    A huge bag of fresh goodies from one of the customers at work and I have no idea how to use them.

    I have:-

    A HUGE Pumpkin-and I mean supersized-its at least 80cm diameter :eek:

    A large swede

    4 Large Beetroot

    A large Cabbage

    2 Large Courgettes

    Any ideas for these?Preferably things I can freeze as there is enough to feed the 5000-apparently this customer has an allotment and specialises in super size veg-everything is bigger than I have ever seen!

    Help much appreciated :D

    I used to get an organic veg box delivered weekly, and there used to be all sorts of things in there that I'd have to use up inventively.

    The Veg Box Recipes site was invaluable to me. I used to come up with some really tasty meals after browsing their recipes.

    Lots of lovely recipes on there I am going to note down-the ravioli sounds really nice. I am panicking because of the sheer volume of pumpkin, and also beetroot as I have never cooked with these before :o
  • It's not very imaginative, but I'd be inclined to make a load of soup for the freezer. We're getting into soup season now!
