Homemade Mayonnaise

Has anybody made homemade mayonnaise. Was it easy, tasty and do you have the recipe?

    Sure... :)

    350 mil oil
    1 egg
    1 tbsp sugar
    1 tsp salt
    1 tsp mustard powder (or ready made)
    3 tbsps vinegar (or lemon juice or half and half)


    If you have a stick blender you can stick everything in the pot and whizz quickly.

    In either a food processor or a blender you need to whizz everything except the oil for a few seconds and then take about thirty seconds or so to slowly run the oil in.

    (It's usually a good idea to fill your jug with water and pour it into another bowl to practice pouring at the right speed before you use oil going into your mayo)

    Do NOT over mix. If you do the mayo will "break" and turn into a slop.

  • A final tip - don't use olive oil. It will make an odd (but not necessarily unpleasant) tasting mayo, as the olive aroma is too strong. And, it can make the mayo an odd colour too - kinda "puce".

    Use a flavourless oil, like groundnut - which happens to be my preferred oil for mayo.

    Squeaky is right (of course! OMG, could Squeaky ever be wrong?) about pouring the oil in v e r y s l o w l y ............ really important if you use a processor or blender.

    Just after I posted this, I found a recipe on the bbc website. It said to use olive oil but I didn't have enough, so I substituted half for vegetable oil. It was really simple to make but didn't look anything like the shop bought ones. I wanted it for the homemade burgers that I had done for tea. DH said it was nice but the kids didn't take any (I don't like mayonnaise). Wasn't sure how long it would keep for, so I ended up binning the rest. Would definately make it again, but not use olive oil next time.

    This is how we make our mayonaise & it's really yummy. Well I think so.:p
    Get a can of condensed milk. You can use as much as you want. A generous pinch of mustard powder & vineagar. Just add a glug of vinegar (about 2 tbls) at a time & mix until it combines. Keep adding a bit more etc, taste testing until get your preferred zing. Shouldn't be too sweet. Pop in containter with lid on and place in fridge to firm up. This is how my mother did it, and I make it all the time. It's not good for making coleslaw etc but lovely with cold meats, fish, chicken etc.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)


  • To be honest maybe its just my cheapo taste buds but i can't find anything that beats Nettos 37p a jar!
    However from an additive point of angle I should think homemade is better for you!

    thank God!!! I thought it was just me! I make all sorts of HM things successfully, but every try at HM mayo has been disgusting. shop bought for me ... favourite is Asda's OB :)
