    I can't make pastry but I CAN make mayo. The traditional method with 2 egg yolks etc just takes patience in dripping the oil to start with but there's a really easy and thrifty way to do it if you have a stick blender:

    Miracle Mayo
    Take one whole egg (no need to 'waste' or save the white) do not let the yolk break
    Put it in the bottom of the beaker which came with your stick blender (or any other tall, narrow jug or container)
    Add some salt and pepper to taste
    Gently pour 200 - 250 ml oil (sunflower, groundnut or a mix, but NOT all olive as that makes it expensive) on top of the egg so that it's completely buried under all the oil.
    Put the 'cup' bit of the stick blender over the egg yolk, resting on the base of the beaker, and whizz. As the yolk gets blended lift the blender up the side of the beaker a bit to mix in all the oil. Continue whizzing until the oil is all mixed in. THIS IS THE MIRACULOUS BIT !!
    Add about a dessertspoonful of lemon juice of wine vinegar to taste, and whizz a bit more.
    Eat.

    This makes a runnier mayo than if you do it 'properly' with two egg yolks.
    I usually use either sunflower or groundnut oil with about 2 tablespoons of olive oil just to flavour it but it's just up to you.

    I have never stopped finding this to be a little kitchen miracle given how difficult making real mayo can be !

    PS you are going to crack the egg into the beaker of course !

    I'm with morganlefay in that the beaker should be narrow - I use an electric handblender with two whisks in a pyrex measuing jug - they only just fit - using the more traditional method. Mayo can go wrong very quickly when your chasing a bit of egg and oil around a big round bowl!

    Anyone make their own mayo?

    I bet it doesn't keep long?

    I was watching the Hairy Bikers & they said if you make your own you will never buy shop bought again.

    I make my own bread & rolls now.

    And chilli jam & marmalade.

    Want to try tomato chutney & maybe tomato ketchup next.....
  • surely do make the mayo and the hairy bikers are right. it knocks spots off of shop bought.

    it doesnt keep as long as shop bought but thats because there arent any nasty niffs in it to keep it looking ok to eat and to prolong its life. you make enough for each time you need it. takes minutes.. home made mayo is even a different colour. but it is just lovely. easy to make, with either a blender or by hand. guarantee you will eat it off the spoon. mmm with a little garlic and dijon mustard added........

    home made tomato chutney and mustard pickles are also tons better than shop bought. but then everything home made is. i even make my own ice cream. and like the mayo, you will never buy ice cream again.

    I make my own - I make it in small enough batches that I can use it before it goes off (which isn't hard as it's so lovely). With an electric handwhisk and a narrow bowl I have got it down to a fine art and can have it ready in less than 3 minutes - and yes, it is nicer when left in the fridge for the flavours to blend properly, but I'll still use it straight from the bowl if I have to!!

    Yes I have done in the past and it supasses anything bought in the shops. I love home made mayo and haven't made any in ages.
