This is the recipe I use. It is a lot easier if you have an electric whisk : wouldn't think of making it by hand, otherwise.
I use a light olive oil and extra garlic to make aioli, otherwise sunflower oil instead of groundnut oil ( a lot cheaper). It is very important to use a quality egg: a cheap egg would taste horrible.0 -

I'm up in the middle of the night, because I wasted 12 eggs yesterday trying to make mayo, more importantly I broke the wonderful whisk attachment for my lovely old mixer.
I think I must have been overbeating as it thickened OK, but then separated every time. I've made it once a week for the last 4 weeks and it's worked first time every time until yesterday. I've been making it as I wanted it with FR eggs, but for what I wasted I could have bought the best organic stuffThere is nothing either good or bad but thinking makes it so.0 -
I googled 'homemade mayonnaise' and came up with this one from St.Delia.
She recommends only using the egg yolks and that the finished product should keep in a screw top jar for a week in the fridge.0 -

Yep. Over working mayo makes it "break". Hello
I have a bit of a glut of eggs from the chickens at the moment so thought I would have a go at making some mayonnaise.
First attempt was a bit of a disaster so any foolproof recipes or hints and tips would be much appreciated
