I have an egg-related challenge for anyone to help me with... Costco eggs are 2/3 the price of asda, but I'd have to buy 60! So I'm wondering if I can creatively use em all up in 3 weeks with baking etc and stocking the freezer, apart from quiche, brownies and cakes does anyone have nice recipes for freezable things made with egg?
we get on average 21 eggs a week from our 3 chickens... I occasionally give 6 away or sell 6 but most weeks we have all 21 to use up!
You can freeze eggs if that helps - 2 ways: 1. crack the egg ut of the shell into a container and freeze (apparently best to freeze in quanitites that you would use for a cake) 2. beat the eggs and freeze. I haven't done this so don't know how well it works but might be worth a try!
Recipe ideas: Ice-cream with the yolks and meringue with the whites; cakes; pancakes, waffles, quiche, egg and bacon pie....
we do frittata's for an evening meal but I don't think that will freeze....

Delurking after about a year of following and "borrowing" all you fab recipes and hints.
If I have too many eggs - which happens quite often, as our local Co-op (no homegrown eggs around here unfortunately!) often sells off the organic eggs four or five days before BB date ridiculously cheaply - about 40p for 6!! I batch cook a few loaves of either HM or whoopsied bread into French Toast and freeze it. Reheats easily in the toaster, and great for easy breakfast or snack, and if we ever manage to get a lie in on a Sunday (once in a blue moon) the kids like to do it themselves, and make everyone a "cooked" breakfast in mum and dad's bed! Should be easy to cost, and perhaps if you have a MW or toaster at work you could use it for lunch too?

I have done ww and sw and doing sw at the min and it is so much easier and filling especially if your almost veggie (lost 10lb in 4 weeks )

Re ww vs sw...I have done both (along with lighterlife) and just started back with ww...its the only one in my book that really encourages healthy eating, excersie and moderation and I just couldnt get to grips with sw...could never suss what I was meant to, or not, eat! Anyway my two penneth and back to work I go...Nerd no 109 Long haulers supporters DFW #1! Even in the darkest moments, love and hope are always possible.0 -

Again been lurking.....not been at work recently as GF been ill (see my other posts-not the best year!) but LOVE cooking & use slow-cooker a lot, pressure cooker & freeze meals,etc....not a vegetarian but do eat a lot of non-meat stuff....lentil daal is SO tasty (& can be low fat if u cut down on the 'final fry' oil-I keep the oil & even add a bit of butter to my bowl of daal)-I always make a load & freeze in portions OR leave in fridge-never lasts more than 3 days! If you have it with plain rice+yoghurt OR (as I do) a spicy chilli & veg side salad its so good for you & CHEAP! Go to any asian supermarket-pick say 5 different colours of daal & buy big packs-lasts for years! If you can pick up an old 2nd hand pressure cooker daal will take MAXIMUM 25 mins or so to cook!
Toor Daal with roasted garlic & Spinach (feeds 6)
- 1 mug (coffee mug!) toor daal or channa daal
- 1 teaspoon turmeric
- 3 mugs water
- 1 1/2 to 1 3/4 teaspoons salt (or season at very end)
- 1 WHOLE bulb garlic
- large bunch spinach leaves-washed-or frozen
- 8 dried red chillis
- 2 teaspoons tamarind concentrate OR 4 teaspoons lemon juice
- 2 teaspoons cumin seeds
- 2 teaspoons mustard seeds (black)
- A few curry leaves-dried-optional
- Fresh coriander &/or fresh mint-optional
- 4 tablespoons oil (not olive oil)-can be less if u want
- large desertspoon butter (optional but lovely-remember this feeds 6!)
- Small pinch sugat
- Pepper to taste
Either pressure cook on full for 08-12 mins or on hob for 30 -40 mins (toor daal), 40 mins-1 hour (channa daal), with salt (I use the above figures but you could always put in less & adjust at end!) & turmeric. When daal starts to fall apart its ready. Aim for a consistency of runny porridge (or thicker if you prefer-this is how i like it!) so take of lid as & when needed if cooking in an open pot! Likewise if it becomes too dry add some water. I part daal/3 water seems spot on if pressure cooking! Once its easily squashed/mashed by a wodden spoon its ready! Add spinach & let wilt in-cook uncovered for 5 mins or so to thicken.
Take 2 of the tablespoons of oil (you can do this while daal is cooking)-peel garlic-cut into chunks (do not press/squash!) & cook over LOW heat until chunks are golden. Once cooked take off heat.
Take other 2 tbsps oil-heat to a medium/high heat & add cumin/mustard seeds. When they start popping add curry leaves (if adding) & broken up dried chillis-cook for 30 secs (what a great smell!) & stir in to daal.
Add tamarind concentrate (dissolved in a little water) OR lemon juice, pinch sugar,-simmer uncovered for 5 mins or so (or if too runny a bit longer)...add coriander/mint-taste & adjust seasoning, pepper to taste & add more chilli if needed!
Delicious & adictive & CHEAP-the roasted garlic is so sweet!
BREADMAKER RYE+ WHOLEMEAL LOAF (MAKES A SMALL LOAF IDEAL FOR 2/3 PEOPLE OVER 2 DAYS OR A HUNGRY FAMILY FOR ONE DAY-CAN BE DOUBLED, ETC). Rather than measure liquids i weigh them-easier!- 195 grams wholemeal stoneground (or normal) flour
- 85 grams rye flour
- 1 teaspoon salt
- 2 teaspoons sugar
- 1 tablespoon oil
- 2 teaspoons dove fast yeast
- 220 grams (or ml) luke warm water
- 1 crushed vit c tablet (I use hol/barret-any will do & won't make bread taste of orange-helps bread rise-deffo needed)
Press button-away you go! Notice it'll look TOO sticky at 1st but the dough does thicken up hugely after 1/2 hr-1 hr-do not add more flour!
Cheap/healthy & good for you! It could be hand made but I think the initial 20 min or so kneading would be a sticky hell (!)....hope you enjoy these!0 -
Hi Everyone. I just wanted to say I'm still following this thread avidly (to my DH2B's wry amusement as I talk about it quite a lot!) and love the recipes. I've tried several and while I'll never be as frugal as some of you, I have you all to thank for seriously helping me to make a big difference in our food bills. Thank you very much!
Also, have you thought about drying the eggs? I wonder if it is possible to make your own dried egg power to use in cakes and stuff at a later date?

Thanks for the advice re SW and WW, I think maybe I will try WW as another lady from work is going to be doing it and the class near me is on a Monday evening. The Slimming World stuff does look quite complicated to work out, I looked on the website but still didn't get the Red and Green thing...God is good, all the time
