those muffins work out at 2.5 ww points each, butter is the problem if you can get lower fat option to replace them then it would be better, eg half fat butter gives 1.5 pts per muffin.

I'm going to give up on nettling idea for a bit as fergie is taking forever with his 10.30 feed:
10.20 - 10.30 incessantly F: mumma! i am outraged! where is my milk? this is an affront to my babyhood, I do not like it here! my placenta always nourished me immediately! I am writing to the baby ombudsman! how dare you let me be born into this world of starvation!
10.20-10.30 me: oooooh sorry lovely boy, look I'm doing it now, boils kettle, fiddles around with scoops, bottles, tries to find gripe water....coming now...
10.30 me: here you go!

ooh thanksBunny that was quick TBH 2.5 points is not that bad if they are as big as normal muffins
I am going to use flora light i think also found a recipe for muesli muffins but lost it now...doh
Babies are terrible for intefering with well laid plans ...in fact it doesn't get any better when they are older... lol

Recipes I can do, costings not so muchI know I got free sausages but I would have to do some serious scrabbling to find my receipts
Sausages with Guinness gravy- Serves 4
700g Sausages
250ml Guinness
1 tbsp olive oil
20g butter
2 large onions, finely sliced
1 dessertspoon sugar
300ml stock
1 dessertspoon plain flour
1 tbsp white wine vinegar (I used some very old wine from our shelf)
Method
Heat oil in a large frying pan, add butter, allow to melt then add onions.
Cook on low heat for 25-30 minutes stirring occasionally.
Sprinkle in the sugar, mix well and cook for about 5 mins until brown and caramelised.
Stir the flour into the onions and cook for 1 minute then add the hot stock and the Guinness.
Bubble for a minute or two, then turn right down and leave to simmer.
Meanwhile, grill the sausages until browned on both sides.
Check seasoning on gravy, add vinegar. Transfer sausages to gravy and continue to cook for 15-20 mins until sauce is thickened.
It's a great recipe and very 'man friendly' I find, I don't like the taste of Guinness but I really like this sauce
Broccoli and Stilton Soup- Serves 4
Ingredients- one large onion
- 1 potato, diced
- 1lb broccoli, chopped (I used the stalks too)
- 1.5 oz butter
- 1 pint chicken stock
- 1/2 pint milk
- Splash of single cream (if you have it!)
- 6 oz Stilton
- Chop the onion and soften in the butter for a few minutes.
- Add the potato and broccoli and cook for a few minutes.
- Add the stock, cover and simmer for 20 minutes.
- Leave to cool for 15 minutes then process (I used a hand mix-y thing) until smooth
- Add the stilton, milk and cream and heat gently stirring often until the stilton has melted and the soup is hot.

well they look ok
and they taste ok
not very sweet but the tartness of the berries makes up for that
the modified recipe was
Low Fat Blueberry Muffins
200g Plain flour (half wholemeal, half white)
50g sugar
2 tsp baking powder
Level tsp of bicarbonate of soda
Pinch salt
1 egg
1tsp vanilla extract
50g Flora light melted and cooled
100ml skimmed milk
100g Onken fat free natural yoghurt
100g fresh Blueberries
Mix all dry ingredients in a large jug and all wet ingredients in another
Mix the wet ingredients into the dry until well mixed don’t worry about lumps the less mixing the better the muffins
Pour into muffin cases
Bake for 20 mins at Gas 6
I only managed 10 out of the mixture so guess its still probably around the 2.5 pts mark?
