Here's a vegan friendly recipe for you ceridwen:A
chick pea curry with apricots
Ingredients
8 servings
4 tbsp oil 6p
500g onion 17p
4 garlic cloves, chopped 12p
8 tsp 10g garam masala 10p
220g chickpeas raw weight 21p
340g dried apricots, chopped £1.27
400 ml orange juice 22p
[FONT="]Heat the oil in saucepan. Add the onion and garlic and saute for 2 minutes. Add the spices and stir well. Add the chickpeas, apricots and orange juice and cook on a low heat for 3 minutes. If the curry is too dry add a little hot water or stock.
27p per serving, or 37p if you include a generous 125g rice with the dinner :money::money::money:

Lol re the towering over...our weezl is quite tall so it will take a while but I, on the other hand am a shorta@se at 5ft nowt so he'll be taller than me at the rate hes growing, within weeks!

Am so pleased to see this thread up and running again! Will be popping in now and again to keep up hopefully. Especially as my bubs should be making an appearance in about 2 weeks time, I will be looking out for nice frugal recipes and tips that are feasible with a new little one
And Weezl, I think you are most def allowed the odd shortcut like ready chopped veg all things considered! :cool: My eldest is 2 1/2 and I still rely on the ole smartprice frozen veg stand bys pretty much every day (is like a very cold greengrocers in my freezer!)Love and compassion to all x0 -
I'm going to go foraging for nettles today with fergie in a sling, wish me luck!
hopefully I'll make this:
Spanish nettle stew
Oil approx 6p
250g chorizo sausage, finely chopped 1.95 1015 cals
500g onion, peeled and finely chopped 17p 210 cals
2 clove of garlic, peeled and finely chopped 6p
300g celeriac finely chopped 42p 127 cals
1 kg fresh spinach or nettles, washed and chopped (£3 with fresh spinach)
can tomatoes 33p
250g dry weight chickpeas, soaked boiled and simmered 23p
1.3 litres chicken stock 11p for chicken gravy
salt and freshly ground black pepper
125g smoky bacon, finely chopped and cooked 28p
If 12 servings, then 29 pence per serving:money::money::money:unless you use spinach, then it's super pricey!
Put a couple of tablespoons of oil into a large pot and add the chorizo. Allow to heat up and cook for a couple of minutes until the fat comes out of the chorizo, then add your onion, garlic and celeriac. Turn the heat down and cook slowly for 15 minutes with a lid on and without colouring the onions. Now take the lid off. Stir and add your nettles/spinach, tomatoes, chickpeas and chicken stock. Bring to the boil, then lower the heat and simmer for around 40 minutes.
At this point you can remove about a third of the mixture and puree it in a food processor. Pour it back into the pot, give it a good stir and season to taste with salt and pepper. Remove from the heat and stir in the smokey bacon and 2 or 3 tablespoons of oil.

Skinny Blueberry Muffins
Ingredients
50g Caster sugar
100g Plain white flour
100g Plain wholemeal flour
2 tsp Baking powder
½ tsp Bicarbonate of soda
pinch Salt
1 Egg, beaten
1 tsp Vanilla extract
50g Unsalted butter, melted and cooled
100ml Skimmed milk
100g 0% fat Greek yogurt
200g Fresh Blueberries
Method
1. Preheat the oven to 200ºC/Gas 6. Line a 12 hole muffin tin with paper muffin cases.
2. Combine all of the dry ingredients in a large bowl and mix well.
3. In a wide necked jug, mix together all of the wet ingredients and whisk well.
4. Add the wet into the dry mixing sparingly, the more you mix the heavier your muffins will be. Don't worry too much about lumps, they will disperse while cooking. Now gently stir in the blueberries.
5. Divide the muffin mixture among the muffin cases, filling each case no more than two-thirds full.
6. Place the muffin cases on baking sheets. Bake each batch for 15-20 minutes until risen and golden.

can i replace the butter with oil do i just weigh the oil or would low fat spread be a better option?
was thinking i could do lemon(extract and sultana /poppy seed as blueberries expensive (but i have some in the garden for later in the year!!)

Shaz, am I doing price, calories, or ww points? I can do all three but it may take me a wee while! We could experiment with equivalent oil for butter, but then you'd've wasted all those lovely blueberries! Maybe I'll google it... Vegans must substitute oil for butter.... maybe ceridwen knows some links....xxx

Morning everyone! My 'dinner party' went well last night. Broccolli and stilton soup, yummy and really easy! Then sausages in guinness gracy with sweet potato mash and roasted veggies (butternut squash. courgette, peppers, leeks). The fattening suprise was a layered pudding with chocolate swiss roll, ice cream and cream, it was very good. We found enough chairs for the 9 of us and some wine may have been drunk, all in all a great evening.
Anyone got any exciting plans for the weekend?God is good, all the time
