Here's the chutney recipe for those that wanted it
(from 'The Complete Book of Preserves and Pickles' by Catherine Atkinson and Maggie Mayhew).
900g/2lb mangoes, halved, peeled and stoned
1/2 tsp salt
225g/8oz cooking apples, peeled
1/2 pint distilled malt vinegar
200g/7oz demerara sugar
1 onion, chopped
1 garlic clove, crushed
2 tsp ground ginger (I used fresh)
1. Slice mango flesh into chunks and place in a large non-metallic bowl. Sprinkle with salt and set aside while you prepare the apples.
2. Cut apples into quarters and remove and discard the cores and peel. Chop roughly
3. Put malt vinegar an sugar in a preserving pan and heat very gently until the sugar has dissolved completely (stir occasionally).
4. Add mangoes, apple, onion, garlic and ginger and bring slowly to the boil, stirring occasionally.
5. Reduce heat and simmer for about 1 hour, stirring frequently towards the end of the cooking time until the chutney is reduced to a thick consistency and no excess liquid remains.
6. Spoon into warmed sterilized jars, cover and seal.
Store in a cool dark place and allow to mature for at least 2 weeks before eating.
Keeps for up to a year. Once opened, refrigerate and use within 3 months.
Variation
To make it with a bit of a kick de-seed and slice two green chillis and stir into the chutney with the garlic and ginger.

I did make some JTB and its lovely although i tweaked a bit i added quite a bit more sugar and i used tinned mango (3 tins @ 35p each) and added a pinch of chilli flakes it made about 7 small jars w had some last night as a dip with the sensation poppadums it was lush :T
Will definitely make again would make a nice addition to a gift basket with some poppadums
I plan to do lots of preserve presents next year i did one for my hairdresser containing mango chutney,pizza sauce and (prizewinning )rhubarb and ginger chutney.I laid in a wicker tray lined with straw and covered with gold cellophane ..............and forgot to take a picture!!
Next year i am buying nice new jars and going to use these bags

oo did you look at the others shaz - the tote bags in organza look lovely too...and not badly priced. Christmas Cake
Ingredients:
2 cups flour
1 stick butter
1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
Lemon juice
4 large eggs
Nuts
1 bottle tequila
2 cups of dried fruit
Sample the tequila to check quality. Take a large bowl, check
the tequila again. To be sure it is of the highest quality, pour one
level cup and drink. Repeat. Turn on the electric mixer. Beat one
cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat
again.
At this point it's best to make sure the tequila is still OK. Try
another cup... Just in case. Turn off the mixerer thingy. Break 2 eggs and
add to the bowl and chuck in the cup of died fruits.
Pick the pigging fruit up off floor. Mix on the turner. If the fried druit gets stuck in the beaterers just pry it loose with a drewscriverer. Sample the tequila to check for tonsisticicitystuency.
Next, sift two cups of salt. Or something. Check the tequila. Now
shift the lemon juice and strain your nuts. Add one table. Add a shoon of
spugar, or some fink. Whatever you can find. Greash the oven. Turn
the cake tin 360 degrees and try not to fall over. Don't forget to beat
off the turner. Finally, finish the tequila and wipe counter with the
cat.

To make mine OS prefer to use HM Sloe Gin to Tequilla. It also means the cake is baked in the oven rather than over a flamin' glass!! _party_0

Hi weezl recipe for your posh coffee ice cream pllleaaaase!!!!!??? Also can i be cheeky and get your shortbread recipe, am hoping to make lots of things on xmas eve to go in peoples xmas day hampers as dont want any of it to go stale or go off etc!!!! Busy day xmas eve!! PS belly pork is absolutely yummy with pumpkin or butternut squash, its like a curry type dish put some spices in there and its nomnomnom!!!!! :-) Hope all are ok x x x

Hi everyone, hope all is well with you all xx
Just been to my local Somerfield and picked up a nice Salmon mousse ring for Xmas (reduced to £2 - original price was £7 !)
Also picked up 2 packs of fresh noodles (reduced to 25p each), a pack of beansprouts (reduced to 12p) a big pack of turkey breast (reduced to £2.25) so will be doing stir fry tonight for tea. Just got to add some of the veggies from the freezer that we grew last year so it should do 2 meals at a cost pp of 28p! :T
I've done lots of batch cooking the last few days so there's lots in the freezer for in between Xmas and New Year.
We're off up to see the family the week before Xmas and then back up for New Year so haven't got that much food to buy really !
Just about to make my food shopping list based on what's in the freezer and what I've already managed to buy that's been on offer and hopefully it shouldn't be too long .......... especially since I HATE food shopping just before Christmas ! lol

We are having a big mr t delivery tommorrow but hardly amy of it is food

I am doing an indian buffet for 14 on boxing day but have most the stuff except some diced chicken in already.
the menu is
Homemade Onion bhajis with yoghurt sauce
poppudums and pickles (homemade mango chutney and raita)
lamb samosas
chick pea and potato curry
lamb mince curry
chicken tikka masala
chicken korma
lemon and ginger lentils with spinach
naan bread
pilau rice
bombay potatoes
I do have a question
the onion pickle in restaraunts how do i make it , its the one that just looks like chopped raw onions but is very mild
Having indian beer to wash it down with and a frozen yoghurt dessert
All cooking can be done in advance or in slowcooker so nice easy day considering
I love having family over and this year is extra special as my MIL is staying for a week and my auntie who has been ill is coming too

Pleased to hear it's not just me that hates food shopping at this time of yearlol .... I seem to just spend my whole shopping time wandering around in a daze, trying to find the stuff I usually buy has been moved 2 aisles down ! Either that or dodging trolley rage ! :mad:
Your Indian Buffet sounds fantastic ! Don't suppose you want 5 more on boxing day do you?Sounds like you're going to have a fantastic time :beer: .
I have a bit of a love/hate relationship with Xmas but hopefully be more love this year because i've been very organised and will have more time to do fun things rather than rush around doing last minute shopping ! Last 2 years running have been disasters as i'd left it all to the last minute - 1st year hubby's wages dept got blown up by the Bunsfield Oil thingy and last year his BACS system went down so they didn't get paid until Xmas eve ! :eek: If you've seen that advert on the telly for all those people who go to the garage at 11.59pm on Christmas Eve to buy their xmas pressies ... well ...... that was me for the last 2 years ! :rotfl:
Wish I could help with the onion pickle, I know the one you mean but have googled it and it comes up with more of a chutney thing rather than just the onions. Do you have a friendly local indian restaurant you could ring and ask?
Am going to go and have a nice bubble bath now and pamper myself a bit (definitely won't get any time to do that next week ! :rolleyes: )
