too many avocados! help!

    I am sure there'll be a thread somewhere for this but I can't seem to find it - sorry!

    I have 2 squidgy avocados, is there anything other than guacamole I can make?

    If not, can I freeze the guacamole?

    Yes, you can freeze guacamole... just use a little more garlic when you make it than you would normally, because the taste seems to go when you freeze it.

    As the title suggests I need some avocado help! :confused:

    I bought two avocado's meaning to put them in a salad but I just don't fancy salad in this cold weather. :snow_grin

    Does anyone know of any tasty, hot recipes that would make use of avocado's?

  • Guacamole on top of nachos or jacket potato? Serve with some chicken?

    1 meal I love is to cook some prawns with salsa and add some capers and lemon juice. When the prawns are nearly cooked add chopped avocado. serve with grated cheese, salsa and soured cream.

    try this baked avocado recipe with stilton for a hot variation!

  • I had the same thing, I lurve avocados but didn't fancy it cold. I also had some mozzarella to use up, so I cut the avocado in half like you do when you eat it with a spoon, took the skin off, put half in a ramekin, put a piece of artichoke half and some olives in the hole left by the stone then top it with mozzarella and breadcrumbs, then put it under the grill for the cheese to melt. It's yummy! You could also put some pesto or cherry tomatoes or sun-dried tomatoes or whatever you fancy in instead of the olives and artichoke.

    the quesedillas recipe in Economy Gastronomy has slices of avocado on the top to serve. They're very yummy and you can use all kinds of bits and pieces inside with the mashed beans and cheese.
