    This recipe, from The Toastmaster's Inn in Kent, is fantastic! It's a bit more dinner party than every day, but if you need an excuse for a treat then just look at the weather!

    Toastmaster's Baked Avocado
    serves 4 as a starter
    Ingredients:
    2 rashers rindless back bacon
    1 tomato
    1oz finely chopped onion
    3oz peeled prawns
    2 soupspoons thick mayonnaise
    pinch allspice
    salt and pepper
    2 avocado pears
    2-3oz mild Cheddar
    sprigs of parsley and lemon wedges for garnish

    Method:

    Fry the bacon rashers until crisp. Drain on kitchen paper, then chop into small pieces. Blanch the tomato in boiling water, remove the skin and chop coarsely. Put the bacon, onion, tomato, prawns and mayonnaise into a bowl and mix together. Add a pinch of allspice and season to taste with salt and pepper.
    Preheat the oven to Gas 5, 375F, 190C. Halve the avocados and remove the stones. Scoop out the flesh and roughly chop it, leaving about 1/4 inch all the way around. Carefully fold into the mayonnaise mixture. Check the seasoning and adjust if necessary. Put the filling in the shells, moulding it up slightly in the centre. Grate the cheese and scatter evenly over the top. Place the avocados in a shallow ovenproof dish (or individual ones) and bake in the preheated oven for 10 minutes. Put under a hot grill for several minutes to brown slightly, then garnish with parsley sprigs and lemon wedges and serve at once.
  • Make a toasted sandwich with bacon (or veggiebacon, if you're me!), avocado, lettuce and mayo. A rare treat for me that I LOVE!

    Mash it up with some salt, pepper and lemon juice (and some mayo if you want) then spread it on toast. Yummy!

    It's nice as a side dish with chilli - perfect in this weather (snowing here again). Just do a chopped avocado/tomato/onion salad with a lemonny dressing, and serve it on the side with chilli and rice.

  • Hi everyone,

    We had a little trip to morrisons this morning and came home with quite a few avocados, some arn't even ripe yet but some are ready for eating :D

    I'm just curious what are your favourite ways to eat avocados? I normally like to make guacamole or just eat them in salads.

    I chop them with mozzarella and tomatoes for a tricolore salad. I'm quite happy eating them on their own though - very nice mashed on brown toast with a sprinkle of balsamic.

    I like to cut mine in half and scoop out the middle,and just eat it off a spoon! But I also have it in salads, or with smoked salmon if I get any reduced!

    I picked up loads the other week, and ended up making a facemask with one aswell, it was fantastic. Mashed avocado, greek yogurt, honey, oats and a little extra virgin olive oil. It also tasted delicious ! :)

    Halve the avacado, remove the stone and fill with cooked prawns and a little mayo (don't like Marie Rose sauce).
