too many avocados! help!

Glut alert!
I got these bought for me today - 7! I have eaten one, I don't care about the fat or the calorie content cos I know its all good stuff and I have been off my food anyway, can I freeze guacamole, or is there something else other than eating them on toast with salt and pepper, or scopung them out of the skin with some ketchup (yep i know i aint real posh) They are too soft to slice so i cant do anything sliced.

If only I'd seen this before I went to the market today. They were selling a WHOLE BOX of avo's for £1!!!!!

Am so envious, I just love eating them as they are. Who cares if they have loads of calories, they are so yummy!
Common way of serving was with prawn cocktail, but think that's gone out of fashion these days. I used to do a version for me (vegetarian) with avocado pieces and melon chunks (recipe states melon balls, but never could be bothered just for me), in rose marie sauce.

Creamy avocado
1/2 Spanish onions, finely diced (or just use any old onion lurking about)
1 clove garlic, crushed
2 avocados, peeled and stone removed
2 tblsps lemon juice
1/4 lb. light cream cheese such as Philadelphia
1/8 tsp. Tabasco sauce, to taste
salt and black pepper, to taste
Combine all ingredients in a food processor or blender. Serve with raw veg such as carrot batons, cucumber and crusty bread, tortilla chips, pitta bread slices etc.0 -
Would keeping them in the fridge slow down the ripening process and make them last longer, or shouldn't you put them in the fridge?

Hi Curry Queen,
I usually store them in the fridge, and I do think that this helps them last a little longer.
One of my favourite ways of serving them is filled with finely chopped raw cauliflower mixed with garlic mayonaise and with bacon bits sprinkled on the top.

That's good to know and means I can put off thinking about them for now and concentrate on using up some of the other stuff that won't last as long

Avocados are also very good for you - they contain oleic acid, a monounsaturated fat that may help to lower cholesterol. Also, they are a good source of potassium, a mineral that helps regulate blood pressure.
Re storage - found off t'internet
A firm avocado will ripen in a paper bag or in a fruit basket at room temperature within a few days. As the fruit ripens, the skin will turn darker. Avocados should not be refrigerated until they are ripe. Once ripe, they can be kept refrigerated for up to a week if they have not been sliced.Only 5% of those who can give blood, actually do!
